Multitasking Monday

One week into the new year…can you believe it?  Where does the week go?  Seems like just yesterday, I was hosting a fry party and now I’m running around my house making food for the week, searching for my lost marriage licenses, and listening to some new podcasts.  I am multitasking like crazy, trying to make the most of this Monday after a fun and busy weekend!

Saturday morning, the BOY and I were back at the gym after the last two holiday weekends, training together with free weights and dumbbells.  We left with some serious sore arms and made our weekly trip to the Target before running a few other errands.  I refueled with a ginormo latte!

We spent the afternoon cleaning our garage to fit in a car and then napping before getting dressed up for sushi date night.

Sunday morning was another early wake up.  I drove into the city to meet my mom and some friends for a yoga class.

After yoga, I met some of my old coworkers for a fun brunch, catching up over coffee and omelets.  Then, I was back home to scoop up the BOY for dinner with his parents.  On the way, we stopped by my parents house quickly to say goodbye to my dad who leaves for Florida today and have a quick pre dinner glass of wine with my mom’s new wine glasses.  When I woke up this morning, it occurred to me that I did not get close to what I wanted to get done this weekend…hence the busy day today.

It was tough for all of us to get up and moving today!  And then it took me extra time to get myself pulled together and out the door.  My first stop was the gym for an intense training session.  My biceps were still sore from Saturday and the resisted burpees were brutal, but it was a GREAT workout.  Afterwards,  I hung around for a yoga class.

I don’t typically double up on workouts, but I have been wanting to take the Monday morning teacher’s class for awhile.  With a busy week ahead, today was the perfect day to get there.  The class was tough, not just because I was tired, but absolutely incredible and inspiring.  I left the yoga studio feeling invigorated for the week ahead and at peace with the week behind.  I ran a few more errands, including the grocery store where I stocked up on fresh produce and meat for this week’s meal plan.

I made lunch and then began the serious multitasking with laundry, meal planning, and initial packing piles.  And continued to look for our marriage licenses which now appear to be totally gone.  Ugh!  In the kitchen, I put tomorrow’s dinner in the crockpot and began pealing carrots.

For lunch this week, I decided to try Candice Kumai’s cleansing soup.  I love starting the year with a warm and hearty clean soup!

The soup was fairly easy to make until the end.  My food processor isn’t big enough to hold everything, so I did it in batches.  However, they turned out inconsistent, so I ended up taking my immersion blender to the entire bowl in the end.

Which made a HUGE mess, but worked like a charm.

I spent the rest of the afternoon working away on a variety of things including making a batch of Fig and Date Energy Balls and trying on my bathing suits before going back to the kitchen to make dinner.

Since my crockpot was in use, I washed my Dutch Oven for it’s next job.  For the second week in a row, Cooper kept me company while he begged for his dinner.

I accomplished a whole bunch of stuff today, so as always on Monday nights, I happily collapsed onto my couch for a bit of down time before bed.  After packing up tomorrow’s lunch, of course.

Cleansing Carrot Ginger Soup

From Candice Kumai

Ingredients

1 tablespoon extra-virgin olive oil

1  yellow onion, finely diced

2  pounds organic carrots (2 bags) scrubbed, peeled, rough chopped

4 garlic cloves, crushed

1 bay leaf, dried

2-3 tablespoons ginger, freshly grated

6-8 cups low-sodium vegetable or chicken stock (*depending on desired consistency)

1⁄2 teaspoon nutmeg

1⁄2 teaspoon sea salt, to taste

Directions

In a large stockpot, over medium heat, add the olive oil and sauté the onions just until soft and fragrant, approximately 8 minutes, stirring occasionally.

Add carrots, garlic, bay leaf, ginger and sauté for an- other 20 minutes, stirring occasionally.

Add in the stock and turn the heat up to medium (a mild simmer). Cook carrots and onion until soft, approximately 20 additional minutes. Remove the bay leaf, discard.

Carefully add the soup to a food processor or blender (an immersion/handheld blender works, as well). Pulse until well combined and a pureed soup forms. Season nutmeg and sea salt. Ladle into soup bowls and serve hot. If desired add a bit of extra ginger, or orange zest to top off soup.

*For a thick soup opt for 6 cups of stock; for a thinner soup go for 8 cups.

Almost Summer Saturday

Hey There!  Happy Saturday! 

It is feeling more and more like summer, which always puts me in a GREAT mood!  And although I haven’t blogged about it, I’ve been busy!

Exercise Updates:

I had a highly successful week of exercise, including a Tuesday morning walk with the BOY and Thursday morning ab work after my run.  You’ll notice I had some competition for my yoga mat.

This morning, I was psyched to go to (instead of teach) yoga!  It was a super humid class and we worked our way into birds of paradise.  Note: using a block is helpful but you will not master this pose with wicked tight hips.  Also note…you can still have a lot of fun with it.

 

Almost Summer Stuff

With the warm (almost) summer temps, brings crisp and delicious white wines.  I indulged twice this week (two more times than my typical work week).  Once during Wednesday night’s Hawks game with an awesome Cooper’s Hawk blend.  And then again Thursday during sushi night!

Summer is also accompanied by No Bake summer recipes and So You Think You Can Dance!  Woo hoo!  After  yoga, I brought in Mediterranean for lunch and began watching the new season of SYTYCD as I worked my way through my never ending to do list. 

 

Recipes

We are having friends over for a BBQ tonight and keeping our fingers crossed that the weather stays nice.  The BOY is grilling up shrimp and calamari…Mmm!  I decided I wanted to make a tasty no bake dessert.

I settled on a Twix Caramel Apple Salad (from Pinterest)!

I adjusted the recipe a bit because I had almond milk instead of dairy milk, but I think it is just as tasty.

Once dessert was settled in the fridge, I decided to make a banana bread with my brown bananas.  As always, I went searching for a new recipe to try.

I made a slight mistake…adding in lemon extract thinking it was almond.  Oops! I was able to scoop the majority of it out.  But although the plan was to freeze this bread for next weekend, I wanted to sneak a taste to make sure it wasn’t too lemony.

The lemon flavor was non existent and this bread was absolutely amazing!!!  It took a whole bunch of will power not to dig into the entire loaf : )

 

Saturday Night

Our BBQ was really fun! Our friends brought their almost 2 year old daughter and we were able to blow bubbles and draw with chalk outside before sitting down for some fantastic grilled seafood, roasted potatoes and savory salad.  Dessert was a big hit too!

And now it’s time to settle in and watch the Blackhawk’s game.  The neighborhood is alive with energy, but unfortunately, I have a splitting headache, so I am missing out on the rest of the festivities.

Twix Caramel Apple Salad

Adapted Slightly From iSave AtoZ

Ingredients

  • 1 small package of instant Vanilla Pudding
  • 1/2 cup milk
  • 1 small tub of whipping cream (I used TruWhip)
  • 1 package of TWIX Bites
  • 2 Granny Smith Apples
  • Optional: Caramel or Chocolate sauce

Directions

  1. Whisk together milk and pudding and then immediately add the tub of whipping cream in it before it sets. Don’t use the full amount of milk as the box says.
  2. Dice the TWIX Bites into halves.  Dice the Granny Smith apples.  Stir them into the pudding mixture, and mix all the ingredients together.
  3. Allow it to set in the refrigerator for at least 30 minutes.
  4. Optional: Drizzle with Caramel or Chocolate sauce before serving it.

 

Best Banana Bread

From An Edible Mosaic

Ingredients

  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup sugar
  • ¼ cup butter, softened
  • 2 large eggs
  • 1½ cups mashed ripe banana (about 3 bananas)
  • ⅓ cup plain low-fat yogurt (or sour cream)
  • 1½ teaspoons vanilla extract
  • ½ teaspoon vanilla bean paste
  • ½ teaspoon pure almond extract (NOT lemon!)
  • Cooking spray

Directions

  1. Preheat oven to 350F.
  2. Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl.
  3. Place the sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add the banana, yogurt, vanilla extract, vanilla bean paste, and almond extract; beat until blended. Add the flour mixture; beat at low speed just until moist.
  4. Spoon batter into an 8½ x 4½-inch loaf pan coated with cooking spray. Bake for 1 hour or until a wooden pick inserted in center comes out clean.
  5. Cool 10 minutes in pan on a wire rack; remove from the pan and cool completely on a wire rack.

Five For Friday VI

1. I started my Friday at a play date with my BFF’s and their adorable mini-me daughters!  Woo hoo to Friday’s off!

2. So I am running a 5k tomorrow morning.  Typically, I don’t sign up for a race the day before a triathlon, but I’ve been talking with a younger friend of mine about doing her first 5k for over a year and I am looking forward to running with her tomorrow!

 

3. The BOY and I had a very nontraditional pre race dinner of sushi…Mmmm!

4.  Tomorrow is a crazy busy day starting with the race, followed by a dentist appointment, and then I have to check in for my triathlon and drop off my bike.  After that, my brother and his fiancé are coming over for dinner and the Hawk’s game.

 

5. Since tomorrow is so busy, the BOY and I spent this afternoon getting prepped for the Father’s Day BBQ we are hosting.  I cheated a little bit with dessert by making White Chocolate Macadamia Nut Cookies from a cube.

Sushi and Life

Since the BOY and I were total bums last weekend, I insisted that tonight’s date night involve leaving the house.  There are a few movies out that we want to see, but the times didn’t work.  We went back and forth about what to do and finally decided on going out for dinner.  I have been talking about sushi since our new friends in St. Kitts recommended a Chinese/Japanese place nearby and it was easy to get a reservation this afternoon.  We drove 10 minutes down the road to TL’s.  The restaurant was busy, always a good sign, and the food looked amazing.

The menu was full of options ranging from Chinese food to sushi.  The TV flashed pictures of some of the specials and although the Chinese food looked fresh and delicious, I had to feed my sushi craving. I ordered a glass of Argentinian Malbec, and the BOY ordered an Asian beer.

We started with an octopus salad which was and spicy and fresh.  For dinner, I ordered a special roll called the Snow Angel (I thought this was fitting for the winter weather) that had avocado, crab, eel, and salmon, and the BOY and I split a BBQ eel roll as well.

We were both really happy with the sushi that we ordered and it really was a great meal.  I can’t wait to return to try some of the Chinese dishes.  When we got home, we decided to play a game.  The BOY through me for a loop by suggesting LIFE.  I can’t say that I have played this game since I was a kid and even then we used to just drive the cars around the board and collect people.  I was really more of a Sorry or Trouble fan.

While we played, the BOY and I snacked on the White Chocolate Puppy Chow that I made for my office’s Family Winter Party tomorrow.  One of my coworkers suggested that I make it again after my Treat Day because it looks like snow.  And the BOY declared it absolutely addicting (and I must say I agree)!  At the end of the game, I had a husband, no kids, a luxury car, and a yacht.  Doesn’t that sound like fun?!

I’m a bit sore after my double WOD this morning and happy with my sushi-filled tummy. I guess it’s time for bed.
