This Week’s Eats {and a recipe}

OMG! I found the most amazing cashew butter at the store on Monday. I was actually looking for almond butter (my jar was almost empty) but there weren’t many options and they were CRAZY expensive.  I decided this would do…

I, of course, tried it immediately when I got home.  Just to check that it was worth the money.  Now, I don’t even have to tell you how delish this is alone on a spoon but even better smothered over a dark chocolate square…Mmm!

Wednesday morning, I went to another incredible yoga class.  It’s been a good week for those!  I will have an entire phone of post yoga glow selfies before this week is over.  On a whim, the BOY and I ditched meal planning and ate Wednesday night dinner cuddled in a booth at Coopers Hawk.

We had an incredible dinner and a macadamia nut truffle for dessert…

Thursday mornings breakfast looked a lot like this…espresso + whipped cream + cinnamon = a new FAVORITE!!!

And of course, I devoured a Pancake a la Jen.  This one includes 1 banana, 1 egg, egg whites, 2 tbsp flax, and cinnamon.

Needless to say, I made it to Friday with another delicious espresso bevvie this morning : )  I brought an oldie back for breakfast.  The occasion…an almost empty jar of almond butter, of course!

And although it’s a bit late, here is this week’s latest recipe.  I discover recipes in all different places, but this one came via Instagram.  Kind of random, but I am adding to my following of friends and yoga gurus some foodies.  Hence this Slow Cooker Cashew Chicken recipe from The Cookie Rookie.

I added in a big bag of frozen broccoli because it’s one of my fave veggies in stir fry and I thought it needed some greens.  This recipe was easy and tasty and reheated perfectly for lunch this week.

Slow Cooker Cashew Chicken

From The Cookie Rookie

Ingredients

  • 2 lbs. bonesless skinless chicken tenders, sliced into small strips
  • 1 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp ketchup
  • 1 tbsp minced garlic
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 1 bag frozen broccoli
  • 1 cup cashews

Directions

  1. Heat oil on medium high heat in a large skillet. Add chicken and cook each side for 2 minutes until browned.
  2. Place chicken in the slow cooker and top with soy sauce, vinegar, ketchup, brown sugar, garlic, ginger, and red pepper flakes.
  3. Stir to combine and add in broccoli.
  4. Cook for 2 hours on high or 4 hours on low.
  5. 30 minutes before done, stir in cashews.
  6. Enjoy topped over rice or quinoa!

Sips, Saturday, Sherlock

Before Saturday began, I celebrated FriYAY!

It was an especially exciting day since it marked the start of my 2 plus weeks of vacation!  Sadly, the BOY had to work late, so I celebrated Friday night date night with Cooper.

We caught up on my DVR and set the table for our Saturday lunch guests.

Then curled up to cuddle and read.  I am trying to get my book finished before the trip and already have some new books and mags packed and ready to go.

I slept fantastically and was sad to hear my alarm go off early this morning.  The BOY and I had one last training session before vaca.  I’m bummed that I didn’t get any pics of us in our matching boxing gloves, but here’s a recycled one.  I did this a bunch today so it seemed legit.

The BOY and I came back home to pick up a bit and a little before 10am, my mom came by to drop off Cooper’s Hanukkah gift and pick me up for our nail appointment.

Then my mom and some friends came back to our house for lunch.  We made two kinds of chili, a huge salad, and had fruit and dark chocolate for dessert followed by lattes from my Nespresso maker covered in whipped cream…Mmm!.  After lunch, I had to run out for a few errands.  On my way home, I swung by to pick up take out Coopers Hawk and a bottle of wine for dinner.

So the BOY called me at work this week to tell me that there is one episode of Sherlock available online.  The next season doesn’t come out until 2017, so we were super excited to spend Saturday night sipping through Sherlock.  I’m not planning to stay up too late tonight because I have a busy day of packing up my tropical clothes while it’s 1 degree outside tomorrow.  What can I say…

Make, Bake, Share!

OMG! Where did this weekend go?

It was a fun one but a fast one.  Thank goodness for Mondays or I’d get nothing done!

The weekend started early Saturday morning with a couples workout…followed by our weekly trip to Target (in the same shopping center as the gym).  When we got home, I made another amazing Apple Pie Protein Shake.  This time I added in fresh cider which made it even better.  Before I left for the gym, I set out some butter (hidden on top of the fridge from Cooper who loves the stuff).

Last week, I was sad not to have the right ingredients to make these mouth watering bars, hence the morning trip to Target.

While the BOY rested, I got to work in the kitchen!  After our workout, my arms were a bit sore, so I probably should have used my big mixer instead of my hand mixer : )

I followed the recipe as written except that I added in a few peanut butter chips (because I had them in the pantry).  These bars looked and smelled incredible, and it was tough to let them cool before diving in.  I kept myself busy cleaning bowls and reusing them for a batch of soft oatmeal raisin cookies (recipe to come).  I have to say, it is SO fun to use all my new kitchen tools and gadgets.  Even the measuring cups make me smile!

The BOY and I had noon Spectre tickets and no set plan for lunch.  Last minute, we decided to swing by one of our favorite restaurants (Coppers Hawk)which is in the same mall as the fancy movie theater.  We had a fantastic lunch and of course a glass of wine.  We raced over the the theater only to discover our movie was at 12:15.  This gave us plenty of time to get cozy in the reclining chairs and order another glass of wine.  We love this theater!

The movie was good, but no Skyfall!  We decided that a nap was in order and came home and climbed into bed. We woke up 2 hours later with Cooper curled up between the two of us, happy as can be.  We had Saturday night plans at my sister in laws and got home just before midnight crashing back into bed.

I have a few new and different recipes to share and plan to spread them out a bit.  But I can tell that this one is already a favorite!  It makes a huge batch which is perfect for sharing with enough to freeze for later, so I have been sharing it with everyone this weekend!

 

No Flour Monster Cookie Bars

From Together As Family

Ingredients

  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) salted butter, softened
  • 1 1/2 cups creamy peanut butter
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups quick oats
  • 3 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1-2 cups mini m&m’s
  • 1 cup mini chocolate chips (or 1/2 cup PB chips and 1/2 cup chocolate chips)

Directions

  1. Heat oven to 350 degrees. Prepare a cookie sheet by lining it with parchment paper.
  2. In large bowl, combine brown sugar, granulated sugar, peanut butter, and butter. With a hand-held blender, mix until pale in color and combined.
  3. Add the eggs and vanilla extract. Blend together.
  4. Add in the oats and baking soda. With a rubber spatula or wooden spoon, mix by hand until combined.
  5. Add in the m&m’s and chocolate chips (reserve some for top of bars if wanted). Stir together well until combined.
  6. Dump onto your parchment lined cookie sheet and spread out. I recommend spraying your hands with cooking spray to work the dough into the pan. Sprinkle the reserved m&m’s and chocolate chips on top (if wanted). Press down slightly into dough.
  7. Bake for 18-20 minutes. The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools. Let cool for at least an hour so the bars can firm up and come together. You do not want to over-bake these.

I swear I didn’t plan to be gone from the blogging world for that long, it just sort of happened.  No I haven’t been reading blogs either so there is much to catch up on!  I’ve just been slammed on so many fronts and at the end of the day just didn’t have the time or energy to talk about it.  Enter in a scheduled ‘down’ weekend.  Well if you can call cramming errands into your Friday night and a workout, teaching a kids yoga class, and a facial into your Saturday all before 2pm ‘down’ time?!

Five for Friday XXXIV {Cooper’s Antics Edition}

By reader demand…a day devoted to my favorite furry friend!

1. Cooper loves ice cubes! He has since he was a kitten and the second you start filling your glass, there is an eager kitty at your toes.  If you happen to lose a cube, it is gone for good as Cooper bats it around the kitchen.  Earlier this week, as I was getting ready for work, he was paying some special attention to my shoes.  Why you ask?  Because he lost his ice cube INSIDE my shoe.

2.  Cooper knocked down our plant in front of the TV during the Hawk’s game Wednesday night.

He had so much fun hunting from ‘the jungle’ that he did it again on Thursday night, and then proceeded to hide in the jungle and stalk his mouse from the leaves.

3. On a non Cooper note, the BOY and I had the most wonderful Friday date night.  Dinner at Cooper’s Hawk (yes…that is where Cooper’s name came from, so I guess this is related to our kitten).  They have a new burrata appetizer…yum!  And the wine and service are always on point.
