Not As Much to Say

Haven’t had too much important to share or say lately.  Bloggers, you know how it goes.  Some days you can’t stop your fingers from typing along the keyboard and other days you are just too busy or too tired to come up with something worthwhile to share.  Between Passover, late night Hawks games, busy work nights, and life in general, my photo count and blog posts have been down.  Just temporarily, I think : )

After an on-the-go weekend, including a trip to the city for brunch (Latinicity does a 25$ all you can eat + 2 drinks!), I was more than happy to collapse on my couch Sunday night with some DVR.  Shortly after, my living room was overrun with 5 neighborhood children torturing playing with Cooper.  He got in a few right hooks and some good hisses but the children were undeterred.  He did, however, devour, every single one of the treats they offered him in return.  Eventually, their parents came to collect them and I was back alone folding laundry.  I crashed HARD last night and loved it!

When I finally woke up, I got right at it.  And honestly, I don’t think I’ve stopped moving until now.  Since it’s Passover, it takes a little extra time to meal plan and make sure we have bread-free meals for lunch and dinner.  Luckily, we did our grocery store run last night, so we were all set with food.

I threw Tuesday night’s dinner in the crockpot, a load in the laundry, and then drove off to the mall to be there the moment it opened.  I had two quick errands to run followed by a trip to Costco and then I was back home switching laundry and a new meal into the crockpot for tonight’s dinner.

It was a quick turn around and then I was off to a noon yoga class.  Afterwards, I was meeting with the teacher to talk about the summer yoga teacher’s training.  I know that I mentioned that I was all signed up, but not sure if I told you that I was teaching the anatomy portion?!

I returned home to order a bunch of books of Amazon, super excited for this journey to begin in 1 month.  I had some other ‘adult’ things to do which I attacked quickly and unenthusiastically while Cooper napped next to me.

We had a gorgeous sunny and HOT day, so I decided to head out for a late afternoon bike ride.  I am series about getting in A TON of rides this year!

I chatted with my mom a bit and when I turned around, I discovered a sky full of thick, dark clouds.

I arrived home, just as big rain drops began to fall from the sky.  My mom called to make sure I was safe since big storms with wind and hail, were headed our way.  Cooper started begging as dinner finished in the crockpot and the BOY walked in the door exhausted after a long day of work.  We all dug into dinner and then happily found comfortable places to stay for the Hawks game.

Carnitas!!!

Who doesn’t love taco night?!  Especially Taco Tuesday!

In an attempt to keep dinners simple, but new this week, we made 2 Ingredient Pork Carnitas.  Very similar to 2 Ingredient Chicken, just with pork.

The grill has taken over most of our meals this week…woo hoo…but Sunday, I still pulled out the crockpot.  Great for hearty fall meals but also awesome for warm days that you don’t want to turn on your oven.

We made tacos on Tuesday, and I had leftovers for lunch today.  Both were fantastic, which makes this a good make ahead option!

2 Ingredient Pork Carnitas

Ingredients

~2 lbs Pork (the BOY picked out ‘center’)

1 jar of smoky salsa (or whatever kind you like)

Directions

Spray crockpot with cooking spray.

Place trimmed pork and salsa in crockpot.  Cook on low for 6-8 hours.  When soft and falls apart easily, shred pork with 2 forks.  Return to crockpot and continue to cook for about 1 hour.

Use for tacos or salads or anything else!

We’ve finally got some consistent sunshine in these parts.  Woo Hoo!  After my work day, I had to get out and enjoy it.  I walked for a bit while chatting with my SIL.

Truth, my workouts have been lacking this week due to my work schedule, so I figured any exercise will help my body and mind.  Our food this week, on the other hand, has been pretty on point!

This week was a bit different because we started the week with a delicious meal at Wildfire.  My Monday was pretty fantastic, and I was able to whip up some Buffalo Chicken Chili and a new Sloppy Joe recipe.  Thank you Adam Sandler for inspiring my post title!

Funny Story…the store was out of green peppers, but I remembered that I had a small can of diced green chili peppers in my pantry.  I figured that’d be perfect and dumped them into my turkey.  They looked a bit off and when I looked at the can on it’s way into the recycling, I realized that I just poured a ton of jalapeno peppers into my pan!

Not surprising as I make mistakes a bunch in the kitchen!  To try to fix it, I pulled out about 75% of them and hoped that they’d add flavor and not be too spicy.

Instead, when I did my initial taste test, I felt there was an overwhelming mustard flavor.  I am new to eating mustard so may have used the wrong kind.  I poured in more ketchup and BBQ sauce, and the end result was superb!

So I should admit that growing up I was never that into sloppy joe’s while the BOY claims that he was a huge Manwich fan.  I had to ask him for his opinion of this recipe.  Was it good?  Yes!  Did it taste like sloppy joe’s?  Kind of!  So take that for what it’s worth…a tasty dinner (he made a sandwich while I did a quinoa bowl with avocado), but it may not replicate your childhood favorite meal : )

Would love to chat more about the intricate details of sloppy joe’s, but I’ve got a Blackhawks game to watch!

Slow Cooker Turkey Sloppy Joes

From SkinnyMs

Ingredients

  • 1 pound (454 grams) ground turkey breast (raw)
  • 1 cup onion, diced
  • 1/2 cup green pepper, diced
  • 3 cloves garlic, minced
  • 1 Tbsp yellow mustard
  • 1/4 cup natural ketchup
  • 1 8 oz can no-salt added tomato sauce
  • 1 Tbsp BBQ sauce

Note: I would recommend combing your sauce well before putting it into the crockpot.  I ended up adjusting my quantities.

Directions

Mist a skillet with oil and brown raw turkey, onions and green pepper over medium heat. (You could skip this step, but you will get a better flavor.)  Place turkey meat, onions & green pepper in the slow cooker. Add all the other ingredients and mix well. (See Note Above!)  Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours. If you don’t brown the meat first, then cook on LOW for 5-6 hours or HIGH for 3-4 hours.

Using the Weather as an Excuse…

Sunday was a lazy day!

It’s such a double edged sword…last weekend, we ran around and had a blast in the city, but I was missing some down time.  This Sunday, was all about the down time and of course I felt guilty about using the cold wet weather as a reason not to leave my house.  My day included… Me, the BOY, Cooper, and Netflicks…oh and few rounds of baking and laundry.  All while in the comfort of my jammies.  It was THAT kind of day!  And it was wonderful!

Monday, I woke up recharged and ready to burn off some energy.  With the sun out, I knew I wanted to get out and run!

Now this is my kind of running weather! I ran 6 miles along the path, along with my thoughts, and soaking up some sunshine.

The rest of my day was typical Monday…grocery store, meal prep, and paperwork.

I figured instead of starting of the week with what’s in my crockpot, I’d rather share these amazing cookies with you that I made yesterday.  I had all the ingredients on hand, and so in between episodes of Scandal, I ran back and forth to the kitchen to whip up the BOY’s favorite cookies!

Soft and Chewy Oatmeal Raisin Cookies

From Recipe Diaries

Ingredients

  • 1 cup raisins
  • 1 cup butter (softened)
  • 1 1⁄2 cups brown sugar (packed)
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon cinnamon
  • 2 cups oatmeal (quick cooking oats, but I used half and half)

Directions

  1. First, you put the raisins in a small pan of water uncovered and cook till puffy. Put in strainer to drain and cool.
  2. Cream and beat together (using electric mixer) the butter, brown sugar, and eggs.
  3. Mix together the flour (unsifted), soda, baking powder, cinnamon, oatmeal and add to the creamed mixture, using beater to mix.
  4. Last, add the raisins.
  5. With a spoon, mix them in ever so lightly.
  6. Drop by teaspoonfuls on lightly greased cookie sheets or Silpats.
  7. Bake them at 350 degrees for 8-9 minutes. Take them out before they get brown!
  8. Cool for a couple of minutes on the cookie sheet before transferring to waxed paper to cool completely.
  9. Enjoy!

April Showers and Goals

I should start by telling you that this week’s new recipes have been fantastic…both make again dishes.  However, the pictures of the final meals are a bit sub par (to put it gently).

I already posted the Thai Chicken with Peanut Sauce recipe, so you know what I’m talking about.  Luckily, I also added in a bunch of selfies with my new adorable haircut.  LOL!  Not sure if that will help again today…

But just in case…This recipe is another crockpot goodie that I made on Monday.  It’s easy, healthy (thanks Skinny Taste), and versatile.

Who doesn’t love buffalo chicken?!  My thought was that we could make rice bowls filled with chicken, cheese, rice, and veggies.  I was, of course, planning to add some avocado.

What actually happened was that the BOY made tacos and I forgot to buy an avocado…womp, womp!  I was bummed but not sad enough not to enjoy this delicious chicken.

So now that we got that out of the way…don’t judge my pics, but try this recipes because you can do anything with the chicken…bowls, salad, wraps, etc.  Mmm!!!  Moving on now to goals.  It’s April, which for us brought spring showers.  April does not know what it wants weather wise and it’s been alternating between rain and sunshine all day!  I had a fantastic morning (deets to come) and then sat at home doing some work, loving on Cooper, and waiting for our garage door to be fixed.

March Goals

Workout 5 days a week-GOAL MET!  I definitely got back into my workout routine of strength, yoga, and running.

Start practicing more yoga at home- Still working on it…

Update my blog- There is much to do and I did none of it.  Let’s call this one a Fail!

Unplug and be present! Rocked it and loved it!

Crockpot Buffalo Chicken (for lettuce wraps or rice bowls)

From Skinny Taste

Ingredients

  • 24 oz boneless skinless chicken breast
  • 1 celery stalk
  • 1/2 onion, diced
  • 1 clove garlic
  • 16 oz fat free low sodium chicken broth
  • 1/2 cup hot cayenne pepper sauce (I used Frank’s)

Directions
In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn’t enough). Cover and cook on high 4 hours.

Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.

Brackets and Bars

It has been a bit of an odd week!  The time change, full moon, and impending spring break have had the kids (my patients) in a mood!  In our house, Cooper has been falling asleep in my arms each night, and the BOY has been super busy at work.

Basketball has returned (my bracket has my cortisol levels rising!) and so have the energy bites.  Except this week, we are leaving the world of bites and bringing on the bars!

A healthier option than the amazing Peanut Butter Cookie Brownies, I made earlier this week, both the BOY and I have been chowing down on these bars!  Ok, we have been devouring the brownies too : )

With the ingredients as written, my bars didn’t come together into a dough.  Luckily, I am no rookie when it comes to these things, and so I knew that I could add honey, agave, or maple syrup.  I went the syrup route and my bars pulled together quickly.

I tell you this in case you have the same problem when you make them, and I highly recommend that you do!

I love the mixture of coconut and almond butter, and they will power you through even the craziest of days…don’t ask me how I know this!  Thankfully, I got out of work early on Wednesday and instead of going home to clean my house and do responsible adult stuff, I went to a hot yoga class.

It was a new-to-me instructor, and the class was absolutely incredible!  None of my bracket teams are winning by enough tonight for me to sleep sound, but I might as well give it a try since I have an early morning of work tomorrow.  Looking for more ‘raw’ recipes, check out my very busy Pinterest board!

Almond Coconut Energy Bars

From My Sequined Life

Ingredients

  • 1 cup of whole pitted dates (approx. 12 dates)
  • 1/4 cup creamy almond butter 
  • 1/4 cup roasted almonds
  • 1/4 cup unsweetened coconut flakes
  • 3 tbsp ground flaxseed
  • Maple Syrup (if needed)

Directions

  1. Place all ingredients in a food processor and blend for one to two minutes, or until everything is evenly combined and just about smooth. You may still have little crunchy pieces of almonds remaining.   If a dough does not form, then add in maple syrup (or another sticky ingredient like honey) and continue to process.
  2. Line a 9" x 5" loaf pan (or a small dish) with parchment paper or cooking spray and press bar mixture evenly into about half of the pan. Refrigerate for at least 45 minutes so the mixture sets. Once chilled, cut into bars and store in the fridge

If I Were Telling You About My Day…

It would start with some yoga.  Not tropical paradise yoga as pictured above, but sweaty studio hot yoga.  I didn’t sleep so great last night, my monkey mind was running wild, and I struggled to stay focused throughout this morning’s challenging class as well.  In the end, I worked hard to stay present but left feeling grounded and empowered.  I love starting my day on my mat!

I got to go into work a little later than usual and had planned to spend the extra hour enjoying a latte at Starbucks.  When I got home, I realized that I also had time to prep tonight’s dinner (meatloaf in my new meatloaf pan), so I would just have to bake it when I got home at night.  This meant that I wouldn’t have time to do my hair, so I sacrificed my hair for dinner.  I am in desperate need for a cut so I ended up with a ‘crazy hair…don’t care’ situation!

I cut a few corners with the meatloaf recipe form SkinnyTaste, but kept it as written below. In case you are short on time, just know that you can use Oregano instead of Marjoram and you don’t NEED to sauté your onions (although it will be a bit different).

With dinner ready to go in the fridge, I drove over to Starbucks with my book, brackets, and a gift card.  I ordered a ginormo latte while I picked a few teams and then dove into my book.  What a fun way to start the day!

My work day was fairly typical…you know…just working!  However, on my way home I was chatting with my best friend when I changed my mind about parking in the garage.  I switched into reverse looked right, looked left, looked right, looked left and BAM! off went my right side mirror.  Oopps!  I was pretty bummed but what can you do?!

Objects in mirror are sadder than they appear.  Cooper is just sad because he hadn’t eaten dinner yet : )  I should probably clean my mirror before reattaching it tonight.  The BOY arrived home not too much later with a treat to cheer me up.  It’s tradition to have at least one Shamrock Shake every March!

Meanwhile, I put dinner in the oven with some roasted cauliflower and made another batch of energy bites.

Yea, it was just that kind of day!  So my meatloaf turned out amazing!  Let’s just hope we can say the same for my bracket…ha ha!

We ate dinner after our shakes and are currently debating if we should watch the play in basketball games or a movie.  My vote is Spy with Melissa McCarthy!

Turkey Meatloaf

From SkinnyTaste

Ingredients

  • 1/4 cup plus 2 tbsp ketchup
  • 2 tsp worcestershire sauce
  • 1/2 small onion, minced
  • 1 tsp olive oil
  • 1.3 lb 99% lean ground turkey
  • 1/4-1/2 cup seasoned breadcrumbs
  • 1 egg
  • 1 tsp marjoram (or oregano)
  • salt to taste

Directions

    Preheat the oven to 350°. In a small bowl combine 2 tbsp ketchup with worcestershire sauce.
    Sauté olive oil and onion on low until translucent, remove from heat.  In a medium bowl mix turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram. Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
    Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

    It’s only fitting that I started this year’s extra day with a little ME time (and some leaping into handstand).  I had a fantastic weekend…Saturday, I taught a kids yoga class and then went for a 4 mile run.  The weather was AMAZING and it felt like spring.  The BOY and I had lunch together and then I drove into the city to spend some time with my SIL (and Roscoe).

    We caught up on life over some bubbles and then headed out for the night!  It was a well deserved night out that ended with a little dancing before we headed to bed around 2am.  Sunday morning was even more beautiful than Saturday and so we spent most of the day out and about. We walked to get coffee and breakfast, then took Roscoe for a muddy run in the park, followed by a hose off.  We walked to the grocery store for provisions and then it was couch/nap/Lifetime movie time!  We made dinner in and watched a bit of the Oscars before settling in to watch ROOM.  Have you seen it?  By 11pm, I was exhausted and ready for bed.

    This morning, I was up to say goodbye to my SIL before she went off to work.  Then went back to bed for about a half hour.  I enjoyed my morning tea while meal planning for the week on Pinterest before making my way outside.  It was a bit chilly but seriously another incredible day for February.  I loved every minute of my 30 minute walk through the city…so different than my usual commute. I arrived at Zen Yoga Garage (never been before) with enough time to look around, take a selfie, and get to know the girl up front.

    I chose to take a Vinyasa II class because I was craving some introspection and piece of mind.  I had no idea what to expect, but the class surpassed my expectations.  There were only 4 of us and the teacher was incredible.  The class featured some challenging but exciting transitions and handstand play at the wall.  Totally my cup of tea!

    One of the things that resonated with me the most was when the teacher said that we should let go of what we don’t need…okay, we all know that.  But, then she said as we moved into cobra/up dog…open to what you want to receive, to what you need.  All of the heart openers left me feeling happy and the handstands made me feel strong. I ended up walking out with the teacher and as ex gymnasts we hit it off and chatted a bit about yoga and life.

    I stopped by bucks for a latte to appreciate on my walk home (also awesome!).  I changed quickly and met a few friends for lunch in the city before heading back to the burbs.  The weather began to get colder (we have a snow warning…boo!).  I swung by the grocery store to pick up the ingredients for this week’s meal plan.  I ran around the house for about an hour (getting food put away and laundry going).  Then settled into the couch where I soaked up some Cooper love.

    This week’s meal plan is sponsored by Pinterest!  Tonight’s dinner actually comes from Wildtree.  Since I own not one Wildtree product, I had to improvise a bit so this is an adapted version.   And since the BOY doesn’t eat sweet potatoes, I changed up the veggies.

    I was a bit nervous about how it would turn out but it is incredible!  Even the BOY raved about his dinner when he got home late from work around 9pm!

    Monday: Zesty Mustard Chicken with Roasted Veggies

    Zesty Mustard Chicken with Roasted Veggies

    Adapted from Wildtree

    Ingredients

    5 bone-in, skin-on chicken thighs

    1/3 cup Honey Dijon Mustard + a drizzle of olive oil

    1 tablespoon Herbes de Provence Blend (or some random herbs in your cabinet)

    3 small yellow potatoes, chopped into 3/4-inch cubes

    1 pound Brussels sprouts, halved

    2 shallots, peeled and sliced

    2 tablespoons olive oil

    Directions

    Preheat oven to 450°F and line a sheet pan with foil. In a gallon freezer bag, add chicken, mustard and herb blend and toss to coat chicken well. Set aside for 10 minutes while preparing vegetables. Toss potato, Brussels sprouts, and shallots, with olive oil and spread into an even layer on prepared sheet pan. Season with salt (and pepper if desired). Place chicken thighs, and any remaining sauce in the bag, on top of vegetables. Bake for 35 minutes or until chicken is cooked through: 165°F.

    One of my coworkers organized a Taco Tuesday, where we all brought in the fun stuff to make an amazing lunch.  I was in charge of tortillas and decided to make my favorite Corn Dip too.  Tuesday afternoon, we all dug right in.  The food was fantastic and of course brought us all together for mid day stories and laughter.  Taco Tuesday turned into Taco Wednesday and there were even leftovers by Thursday.  We all decided that Taco Thursday got us through the week and posts from The Fat Jewish helped us survive Friday!

    Randomly, the BOY and I ended up having homemade Taco’s for dinner Friday night too.  With some Fritos’ and leftover corn dip…Mmm!  I decided to cancel our Saturday morning training sessions.  It has been a busy and exhausting work week and I am teaching a kids yoga class tomorrow morning. I decided I needed a night of tacos and red wine AND sleep!

    The BOY and I devoured our tacos and watched Big Bang (Spoiler: the karaoke is hilarious!) and then settled on Zoolander (in case we can’t to see the second one any time soon).  Cooper kept himself busy laying around and waiting for his feather to make its way to him.

    And then hiding his feather under the BOY’s chair.  This week the stress and tacos have gotten the best of me.  My workouts have been pretty non existent.  My nights have been full of paperwork and my mornings full of sleep and espresso.  But I am confident after a rejuvenating weekend, I will be back on track next week.  Don’t worry…it’s Nacho problem!

Let me tell you about my Tuesday morning commute…I was running late and ran out the door with enough time to get to work until I got stopped at the world’s slowest train.  When I thought it couldn’t get any worse, the train actually stopped.  15 minutes later, I had pictures and a video and was on my way to work.  Thankfully,  I only arrived 3 minutes late, but Ugh…it was a rough way to start the week.

    2. Yesterday morning, I finally got over my snooze addiction.  I realized what was holding me back from early morning workouts was motivation.  I love to run, but the treadmill is just not fun or inviting.  With warm-ish weather here in Chicago, I felt motivated to climb out of bed, bundle up, and go for a snowy run along the path.

    3. Tomorrow I am teaching a kids yoga workshop.  It is for a wonderful group and I have some great new ideas, but man, every time I teach, I really get so nervous. I wonder if this will ever change…speaking of yoga workshops…I have a playlist to work on…

     

    4. This morning was a bit easier to get out of bed (although I did stay up way too late last night having a glass of wine with some friends) because I was going to  yoga!  #postyogaglow!

    5. Tomorrow we are up early for a workout so it’s a calm night in our household.  A little dinner, a movie, and we are all off to bed!
