Into and Out of It

Hey all!  Sorry I’ve been gone a bit. 

The truth is that sometimes I’m a little more into blogging than others.   True for a lot of things, right?!

Plus, the BOY and I just spent the most wonderful Thanksgiving in New York with my family!

And we’ve been busy getting back into work and life since we got back.  On top of that, I’ve also been a bit out of it. I returned from NY with a terrible cough and although I feel okay, I had little to no voice and was exhausted from all the coughing.  We’ve gotten back into our life groove and so now it’s time to get back into my blogging groove.  Can you believe, there is only one month of goals left in 2015?  No pressure!

November Goals

1. Figure out a fall/winter workout schedule.

I’m working on the details.  It is so tough for me to move my cardio indoors, but the BOY and I have been able to get to the gym together Tuesday mornings (we initially tried Thursdays = not so good).  I’ve also been able to get to some AM yoga classes, which has been AWESOME!

2. Cook, Bake, and Explore New Recipes

I think you probably noticed more recipes this month (especially compared with the last few).  A few favorites include Chocolate Cherry Oatmeal Cookies, Slow Cooker Honey Garlic Chicken, and Cheesey Stuffed Sourdough Loaf.

3. Clean/Organize our house.

We spent Halloween weekend doing a massive clean.  Our kitchen and office benefitted the most.  Although we still have some work to do in the garage, our house looks and feels better already.

4. Reconnect – I feel like I’ve been very wedding-centric recently, so I look forward to spending that time hanging with friends and family.

The best part of life!  It was a fun month getting together with friends and celebrating Thanksgiving with our family!

After the absolute excitement and craziness of a wedding, there was only one place we wanted to be…

Door County, Wisconsin!

We drove up Friday afternoon and after a quick stop at a winery for a tasting, checked into our adorable room complete with a kitchen and fireplace.  We didn’t stay long before heading further up north for Friday night fish fry.  Not surprisingly, there was a wait, so we found a comfortable spot on a bench at the bar across the street, Wisconsin beer in hand.  There is no place more relaxing than DC!

Even though the weather was raining on and off, we had the most wonderful 4 days.  We caught some gorgeous fall colors and ate ourselves silly with all the delicious food.  We hiked through Peninsula State Park and walked through Cave Point and Newport State Park.

The waves on the Lake Michigan coast were intense!  And we built our first rock structure along the shore.

We sampled cheese, bread, wine, and Island Orchard Hard Cider

We drank coffee, hot chocolate, and tea and ate pie, cookies, donuts, and fudge.  We visited our favorite pizza place (twice)!

We visited old favorites and discovered some amazing new places (ie farm fresh meats and fresh picked apples).  And when the rain came pouring down, we gathered around the fireplace to play games and drink champagne.

I shopped the markets and stores and had two peaceful morning runs through the state park.

Five for Friday XXXV

1. I’m sorry it’s been so long since I’ve done a Friday post (although this last Cooper edition is pretty cute).  In fact, I’m sorry I’ve been a not-so-good blogger in general lately.

2.  It’s Friday and that makes me VERY happy!  Especially this particular Friday because the BOY and I are leaving for our mini moon in Door County after this morning’s joint gym session.

 

3. I’m super excited to welcome pumpkin season!  Have you had your PSL or Pumpkin Blizzard yet?

4.  Exciting news…we booked our January honeymoon.  Can’t wait to share all the details!

Unplanned Unplug

I’m back again…

I swear I didn’t plan to be gone from the blogging world for that long, it just sort of happened.  No I haven’t been reading blogs either so there is much to catch up on!  I’ve just been slammed on so many fronts and at the end of the day just didn’t have the time or energy to talk about it.  Enter in a scheduled ‘down’ weekend.  Well if you can call cramming errands into your Friday night and a workout, teaching a kids yoga class, and a facial into your Saturday all before 2pm ‘down’ time?!

I can’t believe it’s been one year since I wrote my 33 Things to do While I’m 33 post.  Rereading it now, it does seem rather ambitious, but it warms my heart to see all that I’ve done this year that’s on the list.  What an incredible 365 days!  I’m looking forward to another exciting and special year ahead!

Packed Monday

Monday was one BUSY day!  It seems that there have been a lot of those recently : )

I woke up and got right to work with some cleaning and house chores.  Then it was off to the gym for a brutal (but much appreciated) pre-vacation workout.

I went straight from there to Whole Foods for a few vacation snacks.  Then to the bike shop to finally pick up my bike. I can’t wait to take it out for a ride SOON!  Just sad that I’m traveling the next few weekends so it might not be that soon.  I had a few more errands to run, including the grocery store before coming home to clean (some more).  I fueled with a PB Chocolate Banana Shake.  Yum!

When I got home, I put dinner in the crockpot.  I feel like I’ve made this recipe before, but couldn’t find it on the blog so decided to share it with you (again?).

My next task was to load up our new dishes (that we just got at our shower) to wash and move into the cabinet.

We’ve had so many amazing meals and memories with our old hand me down dishes, and I am excited to pass them along to someone new.  I was even more ecstatic to enjoy my first meal on our gorgeous new dishes!  And my first ever non-hand-me-down, I picked them myself (with the BOY’s approval, of course), fancy new dishes!

They are a grey ombre that look even cooler in person.   You’ll have to come over for dinner and check them out.  I ate leftovers for lunch all week and each day my coworkers commented on how good lunch smelled.  It looked like a mish mash but tasted delish!

The other big agenda item of Monday was packing.  The BOY and I are going on a weekend cruise with his family, and I wasn’t sure when I was going to have time to throw everything together, especially since I am carrying on…always so tough for me!

Monday: Slow Cooker Coconut Curry Chicken

Tuesday: BBQ Pork Chops and Veggies

Wednesday: Salmon and Steak Night

Slow Cooker Coconut Curry Chicken

From Sweet Treats & More

Ingredients

2 lb boneless skinless chicken breasts or chicken thighs, cut into cubes

5 large carrots, peeled and diced

1 medium onion, peeled and quartered

2 cloves garlic, peeled

1 large bell pepper, seeded and chopped (I used a green pepper)

1 (5 oz ) can tomato paste

1 (14 oz) can coconut milk

1 1/2 tsp salt

1 tbsp curry powder

1 tbsp garam masala

1 jalapeno, seeded and halved OR 1 tsp crushed red pepper flakes

2 tbsp water

1 1/2 tbsp cornstarch

Directions

  1. Grease your slow cooker with Pam. Place the chicken, red pepper, and carrots on the bottom of slow cooker.
  2. Place the rest of the ingredients (except water and corn starch) in a food processor and process together until mixture is mostly smooth. Pour the sauce over the chicken, peppers, and carrots, mix well, then cover and cook on low for about 6 hours.  ***My recipe only needed to cook 4 hours!
  3. An hour or so before serving, mix cornstarch and water together in a small bowl until cornstarch is dissolved. Pour mixture into the slow cooker, stir to combine, and continue cooking for another hour. **This will thicken up the sauce. When the sauce is to your desired thickness, turn slow cooker to warm setting until ready to serve.
  4. Serve over rice, with Naan, and garnish with cilantro.

Heelllooo! 

We are BACK from our weekend in Wisconsin (aka #WisonsinWeekend Part 2).  This time, we had friends and family to share the time with, and it was the most wonderful getaway.

I had plans to post and share a whole bunch late last week, but instead…well, I went out to dinner last Thursday night to celebrate.  What?  I’m sure you will ask!  Well, remember that BIG test that took over my life this past winter?  I passed it!  I was beyond thrilled to find out Thursday at lunch, and the BOY and I decided that a celebration was in order.

Friday, I made it through the work day and then my dad, the BOY and I drove up to Green Lake.  Everyone arrived around 10pm Friday night and bubbles were popped and discussions begun.  The rest of the weekend proceeded with the perfect mix of rest, laughter, real conversations, naps, water fun, and snacks.

I had planned to bake a few things to take to the lake, like these peanut butter cookies, then my oven broke. I did blend up a double batch of my favorite travel treat…Cookie Dough Balls.

Sunday, we got home late and Monday was one of those GO GO GO days.  I had a haircut, eye doctor appointment, wedding stuff, grocery shopping, and of course a trip to the gym to accomplish….you know that kind of day.  I did have time to stop for lunch at one of my favorite places…Mmm!

The good news is that we did get our oven fixed that day, so baking will be BACK.  I do need to get BACK to reading blogs and catch up on what’s going on in your lives too!  And speaking of BACK…we got our engagement pics BACK this weekend!

Well Alex and Brittany, from Dig Primal and Sparkle Kitchen respectively, invited me to speak on their Podcast.  I am big fans of their honesty and ideas and was thrilled to preach about discuss natural movement in babies and of course my kids yoga classes!  I haven’t listened to it yet, but had such a fun time meeting Alex and chatting about kids and nerdy stuff.  I hope you’ll take a listen and let me know what you think?!
