We Need More Snow…

Like we need a hole in our umbrella!

But more snow is exactly what we are getting today (and possibly more on Wednesday)!  In prep for being snowed in, I did what everyone else in town did and stopped by the Super Target on my way home from work last night.  $140 later…and we are all set.  I have Mediterranean for lunch followed by chili for dinner.  I bought some diet Dr. Pepper and a few more dark chocolate bar.  I also picked up some new toys for Cooper because he is just as stir crazy as the rest of us.

Hence, the 6am wake up this morning!  Ahhh!

As it turns out, the snow storm wasn’t as bad as predicted, which I discovered when I finally made my way downstairs to feed Cooper his breakfast.  I made myself a tea latte (tea+almond milk+ cinnamon=my new favorite morning beverage) and some breakfast.  When I was shopping at the Target last night, I was keeping in mind what I had in the house to make food for the weekend.

One of those things were leftover peppermint mallows from the hot chocolate bar at our wine party.  What goes well with mallows?  You guessed it…rice krispies.  I quickly whipped up a batch of Peppermint Rice Krispy Treats.  Not exactly part of the clean eating plan, but still really fun!

They are kind of a mix of winter flavors with fun Valentine’s colors.  Perfect timing…right?!

Since the snow stopped, I waited for a plow to run past our street and then drove over to the indoor track for a run.  I had read about some different ways to add intervals to your workout in Runner’s World and wanted to give it a try.  This morning’s run looked something like this…

5 minute warm up

25 minute easy pace run

1 minute sprint (like I was really cruising)

2 minute recovery

Repeat 3 MORE times

5 minute cool down

 

I felt strong but slow (if that makes sense) and was really tired when I was done.  And hungry!  I came home for quick snack and threw tonight’s dinner in the crockpot (chili).  Then, the BOY and I were out the door for tennis.  Since I have to work this upcoming Monday before my trip, we rescheduled for this afternoon.  It felt great to be on the courts mid day, and I think I’ve even picked up a few skills.  This was the first time that I actually felt like a tennis player (or that one day I could be a tennis player).  I can even hit the BOY”s serve now!

The BOY made a beautiful Mediterranean spread for a late lunch which was followed by a nap.

Although the day wasn’t a total snow day, the BOY and I had a blast together.  I know that I really should be packing for my upcoming trip, but instead I’ve been getting things done around the house and catching up on some DVR.  Watching the Biggest Loser contestants do their triathlon has me incredibly impressed and REALLY itching for warm weather and swim, bike, run season!!!  I’m off to go wake up the BOY and stir my chili.  Have a great Saturday night!

Peppermint Rice Krispy Treats

 

Ingredients

1 bag of peppermint marshmallows

1 stick of butter

6 cups of rice krispies

1/2 tsp vanilla

1/2 tsp peppermint extract

 

Directions

Melt marshmallows and butter together over medium heat in a large dutch oven.  Stir frequently until smooth.  Remove from heat and stir in vanilla and peppermint extract.

Stir in cereal and mix until well combined.

Place mixture in 13×9 pan sprayed with cooking spray.  Spray your hands too so its easy to smooth everything out.

Let sit covered until set.  Can cut or use cookie cutters for fun shapes.

  1. Wow! That looks like a lot of snow! I definitely don’t miss that. Rice krispie treats are my favorite. I have never thought to make them with flavored marshmallows! I was so excited to watch the Biggest Loser triathlon. I knew who was going to win but I love to see the contestants challenge themselves. So inspiring!!

    • They totally would be!
      I thought about going out today because it was sunny but it’s just still cold and wet. I’m hoping to get some outdoor running in on my trip…even walking…just something outside fun : )

  4. Rice Krispie treats?? Yes please! I happen to have some Rice Krispies in the pantry calling my name. Interesting interval workout. I just ran a half marathon a two weekends ago and am looking to change up my running workouts. I may have to give that a try.

      I hope that you enjoy you enjoy the Krispy Treats. They are the BEST! I am really enjoying changing things up with the interval workouts and I think it helped my last half marathon time too. Let me know if you find any new favorite running workouts!

  5. I can’t believe its snowing more!! I am sure you are counting down the days to Vegas!! 🙂
    Is your indoor track a full track on a 10laps a mile track? I can totally see where you are coming from with the not fast but strong. That happens to be a lot!! I am sure once you start running more and are able to be outside it will get better!!
    I am so jealous that you are learning to play tennis. I say I am going to learn every summer and every summer is a bust!!

    • The tennis lessons are really fun! I have been talking about it for awhile and the BOY and I were able to work out our schedules to attend the Monday class. We are super lucky too because it is just the two of us. And because I am learning, I think we will be able to play together outside this summer.

      It is a baby track which is hard for me but I like it better than the treadmill. I usually run for time because there is no way to count laps and this weekend there was the most adorable 3 year old basketball practice.

      2 DAYS until VEGAS!
