Man, this is exhausting!

Tonight, I just missed a photo of him with flour on his nose.
This is one of the recipes I whipped up during this weekend’s baking bonanza. Although in my heart, I really wanted to make cut out cookies, I just didn’t make the time.
So I settled for sugar cookie bars. Although this recipe comes with thick and fluffy frosting, that is challenging to freeze and stack in my cookie containers, so I went with holiday decorations instead.
These chewy bars have fantastic flavors and delicious with or without frosting!

Sugar Cookie Bars
1/2 cup (8 Tbsp) unsalted butter, room temperature
1 cup sugar
1 tsp vanilla
2 1/2 cups flour
1/2 tsp salt
1/4 tsp baking soda
1/4 cup holiday sprinkles
Preheat oven to 375 degrees.
Lightly grease a 8X8-inch square baking pan. Line pan with parchment paper and allow paper to overhang the edges slightly (this will make it easy to lift bars out of the pan).
In a large bowl, using an electric mixer, cream together butter and sugar until light and fluffy.
Mix in eggs and vanilla.
Mix in flour, salt, baking soda and half of the sprinkles.
Pour dough into prepared pan. Use your fingers to spread the dough evenly into the pan. Then cover with extra sprinkles, pressing them down with your fingers.
Bake 16-18 minutes or until lightly golden brown.
