So, It’s Friday…

Where to Begin?  I guess Breakfast makes sense!

Not this morning’s breakfast though….that was eggs with veggies made by my Mom (Thanks Mom!), but yesterday’s breakfast.

But it is a wonderfully tasty, hearty, and filling way to start the day, so well worth sharing.

I was intrigued when I discovered this recipe in the Wheat Belly book.  By the way, has anyone read it? Thoughts?

I love a warm breakfast on a chilly morning, so I thought I would give this a try.  I was happy that this easy and quick combination of flaxseed and coconut tasted so good…especially when covered in fresh blackberries.

After breakfast, I made an early trip to the track.  I forgot my running shoes in the car, and had to trek back out to get them. 

Brrr…it was crazy COLD!

I warmed up quickly though once I started my run.  The plan…60 second speed/recovery intervals.

However, about 15 minutes in, I saw someone I recognized on the track.  My friend/coworker was a few paces ahead of me.  I was excited to catch up to her and abandon my speed work.  It was great to chat and enjoy some company for the rest of my run.

Thursday was a long day at the office, but I was excited for dinner plans with a few of my friends that night.  We laughed the entire time, and I am so lucky to have such amazing girl friends in my life.  Afterwards, I went back to my parents, where I spent the night…hence this morning’s fantastic breakfast.  I unplugged for the day, which was lovely, but I have a lot of catching up to do this weekend.

But, I’m not going to start that tonight.  I didn’t get home until 8:15pm, which is insane.  After another long day at work, I swung by Whole Foods for dinner, groceries, and I just couldn’t pass up this bottle of wine.  One big glass later, I am exhausted, ready for bed, and making plans for tomorrow’s big adventure.

Hot Coconut Flaxseed Cereal

From Wheat Belly by William Davis, MD

 

Ingredients
1/2 cup unsweetened almond milk
1/2 cup ground flaxseeds
1/4 cup unsweetened coconut flakes

1 tsp cinnamon
1/4 cup chopped walnuts, walnut halves or raw hulled sunflower seeds (optional)
1/4 cup sliced strawberries, blueberries or other berries (optional)

 

Directions
Combine the milk, ground flaxseeds, coconut flakes and walnuts or sunflower seeds in a microwaveable bowl and microwave for 1 minute. Serve topped with a sprinkle of cinnamon and a few berries if desired.

 

Note: I added my cinnamon before microwaving. I would recommend topping with nut butters, more coconut, and fresh fruit.

  1. That indoor track looks awesome! Wish there was a nice gym like that in my area. The picture of your breakfast reminded me of Coco Wheats. I loved those when I was little. Warm breakfasts are the best!!

    • Yes…so similar. I was thinking that next time I will add some pumpkin. Yum! It is a free track a few minutes from my office which is great. They also have a lot of good classes so I am hoping to check out their spin this winter!

  2. I absolutely adore Wheat Belly. I read it this summer and was amazed. I rarely eat wheat now (when I can help it!) and wrote an article about it as well! That breaky looks awesome and I’m gonna try it. UM! Happy weekend!

    • I read most of it and skimmed some of the repetitive parts but found it eye opening as well. Do you notice any difference since deceasing your wheat consumption? This breakfast is an awesome find. Let me know what you think of it!

      • Oh yeah, I was completely off wheat for about 3 months this summer and felt phenomenal. I wasn’t sleepy (at all) during the day, I had more energy, it was easier to wake up in the mornings, and I didn’t miss it at all! It IS more expensive not eating wheat, but I think the long term benefits are worth it 🙂

      • ps, just made the cereal! its good, but I dont know if I love it? I think it just taste a bit to get used to the texture! But I am still satisfied and it was fun to try a new recipe! thanks! 🙂

      • You are welcome! Love the comment and feedback so thank you! I was thinking the coconut might be better added on top for extra flavor. Surprisingly I liked the texture but I think the berries helped!!!

  3. The hot cereal recipe looks interesting. I wonder what the nutritional stats are for that. It does sound delicious, especially with the berries. Yum. Oh, and LOVE that malbec. Malbecs are hit or miss for me, but Layer Cake is fantastic. Have fun on your adventure today! 🙂

    • Thank you! Now that there is snow…we will 😉 Luckily I have adventurous friends to pull me out of my comfort zone. I totally agree about Malbec but this one was fantastic! Perfect for a Friday night. The nutrition isn’t listed, so I’m not sure. I thought similar to an oatmeal but you have a smaller portion.

  4. Wheat Belly changed how I eat. I feel SO much better without wheat in my diet. And, when I do accidentally eat it, I feel terrible.

    I’ve made that exact recipe for breakfast before… so good!

  5. There’s something about a warm breakfast that is so comforting!

    One time, I saw my friends parents while I was running and they were walking. It was an awkward situation since I hadn’t seen them for so long and couldn’t just wave! It was so hard to cease my run! haha
