It seems that a lot of us are cutting back on sugar and cleaning up our diets for the start of the new year. Count me inspired and on board! It’s great to read your posts and comments and your dedication has helped me make these last few days my CLEANEST days of the year.

With our trip to Florida only 1 month away, I have bathing suits on the brain!
So…I was thinking that it would be good to go look back through the LWYD archives and find some of my favorite clean and satisfying meals to share. This will hopefully inspire me to get going with meal planning in the new year.
Curried Millet and Chickpea Stuffed Peppers
Broccoli Potato Soup with Sharp Cheddar
Crockpot Breakfast Porridge *Jen Favorite
Taco Soup (spicy optional)
Vegetarian Chili with Sweet Potatoes
Baked Pumpkin Oatmeal (this might be tomorrow’s breakfast!)
Baked Barley Casserole with Mushrooms and Squash
Chicken Parmesan Burgers *Jen Favorite
Roasted Vegetable and Salmon Quinoa Salad
That should keep us busy for most of the winter…right?

Start with the chicken parm purgers…they are super easy and very man friendly! In our house, the BOY is more interested in helping out when there is meat invovlved : )

Ooh, I LOVE this roundup of clean eating meals! I especially love the veg stuffed peppers. I was a HUGE fan of stuffed peppers growing up, + I’ d love to try a new, healthier twist on the traditional meaty version. Excellent idea!
I think stuffed peppers are such an easy and can be made healthy weeknight dinner. I need to make them more often too. Enjoy!
Ohhh these recipes look excellent. Will definitely be stealing a few of these for our house! I agree though… after the holidays we were eating a veggie / tofu stir fry for dinner and both of us were just like, “OMG it just feels SO GOOD to eat normal food again!
Yes, the veggies taste crispier and the fruit sweeter after a month of indulging in the sugary stuff! These are some of my favorites, so I really hope you enjoy them!

Swim suit season could be here this weekend…it’s going to be over 50 degrees : ) Luckily, I was able to sneak in a few planks at work today. Ha ha!

I’ve definitely been cleaning up my diet a bit this week, loading up on veggies, Greek yogurt, and grains! All the roundup recipes look delicious. 🙂
