Don’t you just love it when a meal comes together?! I woke up this morning and found everything in the house to make this amazing breakfast pizza.
I had leftover whole wheat tortilla’s from last night’s fajitas. BTW, the new tortillas at Trader Joe’s are wonderful!
I sliced up an heirloom tomato from this week’s CSA.
We always have eggs!
Mexican cheese from enchilada night.
And topped with fresh basil from this week’s CSA.
A tasty and perfect breakfast. You have to try it!
It fueled me through this morning’s 13 mile run.
I can’t wait to make breakfast pizza again!
Basic Breakfast Pizza
Serves1
1 WF tortilla
1 tomato sliced
1 egg
1 egg white
1/4 cup shredded cheese
fresh basil
-Preheat oven to 350 degrees. Place tortilla in oven for 5-7 minutes until crisp.
-Meanwhile, scramble 1 egg with 1 egg white in a pan.
-Top tortilla with sliced tomato, scrambled egg, and shredded cheese.
-Place tortilla back in oven or in microwave until cheese is melted.
-Top with fresh basil, torn to taste.
