Peanut Butter and Banana French Toast Breakfast Sandwich

I have seen a few recipes for this ‘stuffed’ peanut butter french toast lately.  This morning, I woke up with some extra time to make breakfast and decided to try it.  I didn’t save any of the official recipes, but I remembered the main ingredients and just went with the flow.  What I got was a phenomenal breakfast sandwich, combining some of my favorite flavors.

I started with 1/2 cup egg whites combined with a dash of vanilla and cinnamon.

I had some 12 grain bread in the fridge which was perfect for french toast.  I spread ~1/2 Tbsp of fresh ground peanut butter onto two slices of bread.  Then I sliced a banana on the top.

I dipped both sides of the bread, PB, and banana slices into the egg mixture, careful not to lose any banana pieces.

Place the bread slices on a pan or griddle sprayed with cooking spray.  I wasn’t sure which side to start with (bananas up or bananas down), so I did one of each.  After 3-4 minutes, flip the bread.  I had a little extra egg which helped everything stick together.

I combined the bread into a sandwich with the banana pieces facing each other and grilled each side again until brown.

I topped the sandwich with a few extra slices of grilled banana.  Your warm and gooey breakfast sandwich is ready to eat!  ENJOY!!!

  1. peanut butter and banana is my FAVORITE type of sandwich!!! oh goodness, it only makes sense to put them into another favorite of mine-french toast. What a great post!
