I received an email from my new friend, the Green Grocer, with a recipe for kale chips…
As promised, here’s my favorite raw kale salad:
1 bunch curly kale, torn off the stems and torn into bite size pieces
Whisk together in a bowl:
¼ cup olive oil
1 teaspoon chili powder
2-3 cloves garlic (minced)
Salt and pepper to taste
Add kale to the bowl and massage with your hands until all the kale is coated. Also massage the kale leaves themselves in order to break down the cell walls and make it easier to chew/digest!
Feeling like something crispy? Spread this kale salad onto a baking sheet and bake at 300 for about 20 minutes.
I took my fresh kale out of the fridge and got to work! I used a little less olive oil (2 Tbsp) which is more than enough.
Just a note, I was worried about over cooking my chips and ended up with some soggy ones. The kale will shrink and make sure to rotate it as it cooks. The finished product should be crispy and crunchy.
With the BOY out of town for the weekend, I am having a girls night with Emmy (the cat). We are watching the Grey’s Anatomy season finale without the extra comments the BOY provides during the sappy parts. For dinner, I bought a piece of sockeye from Whole Foods. I have never had it before, but planned to cook it with a dry rub like salmon,. The fishmonger (what a funny name!) warned me about over seasoning this fish which is apparently only available for 6 weeks! So I went with salt, pepper, a mild seasoning and lemon juice. What a treat!
I love having a srumptious home made dinner in a clean and quiet house. What a lovely way to start the weekend!
