Ah, Friday!  Finally an evening to be home before 8pm, have dinner with the BOY, and sit my exhausted butt on the couch to watch Pitch Perfect.  Oh, and blog about our weekend trip to SarasotaOne week ago, the BOY and I boarded a plane for the sunshine state.  We had a slight complication as the BOY got a flat tire on the way to the airport.  Luckily, we were close enough to swing back home to switch cars.

However, my car (having spent the night of the snow storm outside) was buried under thick, heavy snow.  We hurried to clean off my car and move our luggage.  I hate feeling late for the airport, so I definitely had a knot in my stomach as I drove us to O’hare.

We made it no problem and a 20 minute delay seemed like nothing compared to all of the cancelled fights throughout the country so I felt thankful to be boarding the plane.  I alternated between reading and snoozing while sipping on my Starbucks.  We landed, caught a cab to our hotel which was only 10 minutes away, and checked in.

As we walked into the hotel, we were greeted by two of my close high school friends.  I love how life works out that way!  They were heading out to the beach as we were heading up to our room to change out of boots and winter gear and into shorts, tshirts, and sunglasses.  We walked a few blocks into downtown Sarasota which had plenty of options for lunch.  It wasn’t until we were seated outside at a little café ordering lunch and a cocktail that I finally exhaled and FELT like we were on vacation.  I knew it was going to be a relaxing few days!

We had a nice mix of down time and wedding festivities ahead of us.  I spent Friday afternoon catching up with friends by the pool at our hotel.

By 5pm, I was eager to get in a run before sunset.  I laced up my tennies and headed for town.  Last minute I decided to turn onto a large, steep bridge over to Bird Key making my way all the way to St. Armand’s Circle.

I made it home super sweaty (when was the last time I ran in the heat?) and with enough time to shower and watch the sun set from our balcony.

The BOY made us a dinner reservation at a place on the Marina overlooking some ginormous yachts.  We both love seafood and Sarasota is definitely the place for fresh fish.  Afterwards, we attended a cocktail hour hosted by the bride and groom.  It was wonderful to catch up with some old friends, and we were home and in bed early after a long day.  Saturday night was the wedding, but we had the day to spend at the beach.  We hitched a ride to Siesta Key to bury our toes in the white sand.

We found the perfect sand bar to wade in the crisp water looking for seashells.  After which, we lounged in the sun under a clear blue sky enjoying the warm weather and eclectic mix of company.

It was amazing to see people biking on the beach, and I’d be lying if I said that I wasn’t jealous!

After the most enjoyable day, we had just enough time to fight the crowds back into town, grab a quick bite to eat (fish tacos and truffle fries), and shower before the wedding.

When you combine a beautiful evening, with a stunning hotel, and an amazing couple, it can only be described as magical.  The wedding was personal and sincere, and I was so happy to be part of this special event!

The BOY and I enjoyed the entire evening and were actually the last to leave the wedding : )  After midnight, as the wedding guests retreated to the bar, a few of us made our way to the hotel pool and hot tub.  Needless to say, I awoke the next morning with frizzy hair and wreaking of an over-chlorinated pool.  The BOY and I had no plans for Sunday, so we took a taxi out to Lido Beach.

We took a long stroll down to the end of the beach overlooking Long Boat Key enjoying another spectacular day!

From the beach, we walked a few blocks to St. Armand’s Circle.  After Friday’s run, I was eager to get back.  Per our taxi driver’s recommendation, we ate lunch at Columbia Restaurant.  The Spanish food was incredible and possibly the best meal we had all weekend!  With an afternoon Indiana game ahead, the BOY suggested cocktails and basketball.

He didn’t have to ask me twice to spend Sunday Funday with a Mojito in the sun!  We got back to our hotel with enough time for a dip in the pool and nap before one last seafood dinner with the bride and groom and a few of their friends who had also stayed the extra night in Florida.

Monday morning came way to quickly.  I pulled out my running shoes for one last 70 degree winter run.  This time, I stayed along the bay.  There is just something about running along the waterfront that I love!  By the time I came bounding back into the hotel room, the BOY was starving and ready for breakfast.

We had a fresh and filling breakfast at the Toasted Mango leaving more than enough time for one last swim.

Do I even need to tell you how hard it was to leave all of this and pack up for the airport???

But sadly we did!  Our weekend was so bright and wonderful.  The BOY and I had some time to relax, and we returned feeling rejuvenated and already talking about our next vacation!  I’m hoping that just looking at these pictures will keep me warm through the last few weeks/months of winter.

So, I’m sure you can tell by the title of this post that we are back in town after an absolutely incredible weekend in Sarasota, Florida.  I so appreciate everyone’s travel wishes!!!  We easily made it down to Florida and then spent 4 days exploring the city (despite all of my trips to Florida, I rarely make it to the gulf coast) and catching up with old friends.

Plans With Megan and Jen February 5, 2013

Do you have those friends who can so easily push you out of your comfort zone?  I am an outdoor girl at heart, but I don’t always find those opportunities for myself.  Which is why I am so grateful to the special people in my life who suggest a 2 hour car trip to Galena to spend the day outdoors playing in the snow.  I made plans with Megan and Jen weeks ago, and added them to my calendar just like that.  There was talk about doing an outdoor activity and since I don’t see them often, I have been super excited to hang out all week.  Despite my typical need to plan every moment, my work weeks have been busy and exhausting, so it wasn’t until Friday night that I was able to touch base with my friends and talk about our day.  The game plan…snow shoeing in Galena!

For once, the weather was on our side.  I woke up Saturday morning to find a layer of light fluffy snow covering my car!

Jen and Megan drove out from the city to pick me up on our way out west.

There was lots to talk about as we made our way along the windy roads towards the Mississippi River.  Galena definitely looked different compared to my last visit in fall 2011.  It is such a cute little river town with restaurants and shops.

My friend’s found a local shop that rents cross country skis and snow shoes.  The woman who worked here was so friendly and helpful.  She fit us with snow shoes, and gave us a few suggestions for trails.

We decided to go into the woods overlooking the river.

Although we got a little lost, we found our way to the trail head, added multiple layers of clothing, and hooked ourselves into our shoes.

We started walking down a long driveway and although we had no idea which way to go, we found ourselves following an unmarked trail leading down into a valley.  The woods were silent and peaceful, and the only other tracks in the snow were deer and bunnies.

The sun beamed down on the snow covered trees creating an awe inspiring 360 degree view of the forest.

We hiked up, down, over, and under creating our own trail along the way.

There were some steep hills to climb as we went trailblazing through the woods in Galena, IL.

When we found ourselves at a dead end, we turned back around and followed our tracks back towards the car.  Along the way, we spotted an actual trail marker.  Our first trail marker…opps!  It looks like we totally missed the trail the first time and instead forged our own.  Since we had a little more time before we had to return, we followed the actual trail for a little bit.

It amazed me that even this late in the afternoon, the trail was still empty.  We were the first to attempt to descend the stairs in our big bulky snow shoes, which led to lots of laughter.

At the end of the day, we all had a BLAST snow shoeing and actively exploring this undisturbed forest.

As the sun was starting to set, we found our way back to the start where there was a huge lot of fluffy snow to play in.

It was breath taking, and the perfect way to end an exciting day!

The car ride home was nice and relaxing as we recounted the days events.  I am so grateful for spontaneous road trips, close friends, and unmarked paths that always seem to put a smile on my face : )

Now, I just have to figure out how to get my hands on my very own pair of snow shoes!

Friday’s here!  Do you ever have those weeks where you’re not sure if you’ll make it to the weekend?  Don’t get me wrong, thanks to my horse pills, I am feeling way better.  But my tummy has definitely paid the price, and I have been dragging a bit this week.  I’ve been sleeping wonderfully but fatigued by the end of my active day.

What a wonderful way to welcome the weekend!

 

 

The BOY and I are enjoying a quiet evening in, raiding the ridge for leftovers that will pass for dinner.  I was happy to find some veggies and stew.  And we will be laying low tonight as my eyelids are already feeling heavy.

2nd Year Blogger-versary + 1st Giveaway December 23, 2012

They say when you are on vacation you have no concept of time.  This is so true for me…especially with such a strange week (working Monday and Tuesday then off to Florida).  If it weren’t for the ‘Happy Anniversary’ message from WordPress this morning, I might have missed that today is December 23rd which is exactly 2 years since I started Luv What You Do with my first post titled First Day Jitters.

 

Last year, I had a lot to say on my 1 year Blogger-Versary and I’m not sure I could say it any better today!  That could be because I really want to go back outside and climb into the swimming pool hot tub.

 

I wasn’t really sure how to ‘celebrate’ today, but I thought that my first giveaway would be ideal for this momentous occasion.  Unlike some other bloggers, I don’t make money from blogging, so free stuff isn’t knocking at my door.  However, Brooks Running, if you happen to ready this, I love you and want to be on your TEAM.  What is waiting for me every day are the comments, encouragement, stories, questions, and smiles from YOU, my wonderful readers.  I look forward to seeing what’s going on in your world and sharing my latest shenanigans, recipes and photos.  There have been many a stressful day this year when your comment or email has literally made me laugh out loud.  For this, along with the great ideas for recipes and workouts, I am grateful!  Which is why, I’d like to give you a gift.  Sounds fun…right?

White Chocolate M&M Cookies December 22, 2012

In my search for holiday cookies, I came across this colorful M&M cookies on Two Peas & Their Pod.

I loved the bright colors and this unique twist on an M&M cookie.

Candy canes and white chocolate???  Yes please!

I also knew that the BOY would get a kick out of their IU colors (especially during basketball season).

Although I actually made the cookies last week, I am watching the Indiana/Florida Atlantic game as I write this post.  If only they were playing in Florida, I could have gotten tickets to the game (FAU is located right near my family down here).

I thought it would be fun to make these in my mini whoopie pie tins for some thick rounded cookies.  Since I only had one pan, I made some of the cookies this way and the rest as drop cookies.

Both ways yielded perfect and flavorful cookies!

Even though the BOY and I are many miles away, I did rock my new Indiana tshirt today in support of tonight’s game!  In all honesty, I didn’t actually know they were playing until after I put it on, but I did rock the red and white while hanging out with the family all day and stayed up late to watch the game.

White Chocolate Peppermint M&M Cookies

From Two Peas & Their Pod

 

Ingredients

3 cups all-purpose flour

1/2 teaspoon salt

3/4 teaspoon baking soda

1 cup unsalted butter, at room temperature

1 cup light brown sugar

1/2 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1 cup white chocolate chips

1/2 cup crushed candy canes

1 cup White Chocolate Peppermint M&M’s

 

Directions

Preheat oven to 350°F. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.

Combine flour, salt and baking soda in a medium bowl and set aside.

Cream butter and sugars together in a stand mixer fitted with the paddle attachment until combined. Add eggs and vanilla and beat until smooth. Slowly mix in the dry ingredients. Stir in the white chocolate chips, candy canes, and M&M’s.

Drop heaping tablespoonfuls of dough on prepared baking sheets, about 2 inches apart. Bake for 10-12 minutes or until cookies are golden around the edges, but still soft in the center. Let the cookies cool on the baking sheet for 2 minutes. Transfer cookies to wire rack and cool completely.

 

Note: These recipes turn out nicely in a whoopie pie pan if you have one!

If the answer is yes, then I sincerely apologize!  I had a fantastic first day in Florida.  I spent some quality time catching up with my aunt and my grandpa!  I took a dip in the pool, briefly trying out my new goggles and then came back inside to read, actually finishing my book.

All in all, it was a pretty great day!  Along with reading, resting, and eating at the deli, I lugged my laptop down here so that I can catch up on emails (I’ve been awful recently) and some blogging.  Not at the expense of my vitamin D needs, of course, but I thought I would have some free time at night to catch you up on all my holiday baking.

Which brings me to this very important question…

 

Where Have All the Circular Pretzels Gone?

 

I searched near and far, high and low, this store and that store, plus another store and could not find circular pretzels for this year’s holiday chocolates.  I’m sure had I planned in advance I could have ordered some online, but since I found them so easily last year, I didn’t think twice.  I had some help from my mom in locating a non-buttered square pretzel, which was a successful stand in.

Afterwards, I found football shaped pretzels that would have be fun.  Maybe next time!

I spent an episode of Grey’s Anatomy unwrapping Hershey kisses.  I love variety when it comes to these festive sweets which means mixing different kisses and M&M flavors.  This year’s kisses included milk chocolate, dark chocolate, hugs, and white chocolate peppermint (these are the BEST!).  The Grey’s drama continued and my wrapper pile just kept growing!

I mix and matched all of the kisses with all of the M&M’s for some fun flavors and colorful candies!

It is a-okay if your mouth is watering right now because this simple recipe is BIG on taste!

I loaded up my chocolate pretzels with some holiday bark to share with my coworkers.  It’s amazing how simple these are to make yet wherever I bring them, EVERYONE loves them!

I ended up with plenty of candy to share.  After making the bags for my coworkers, I added some to my already full holiday tins.

And of course brought a bag down here with me to Florida!

But the big question remains…how many will be left when I return home. The BOY has already asked which containers ‘hiding’ in the freezer are on and off limits?  And he has snuck into his parent’s tin of cookies TWICE!

At least we know if a big snow storm hits, he’ll have plenty to eat!

 

 

Chocolate Circle Rings Squares

 

Ingredients

Circle or square pretzels (in a pinch, the regular shape will work too!)

Hershey’s kisses

M&M’s (get creative with your flavor combinations)

 

Directions

Preheat oven to 300 degrees.

Place pretzels on baking sheet covered with parchment paper. Unwrap kisses and place them on top of pretzels.

Bake for 4-5 minutes until chocolate is soft. Look for chocolate to start to ‘sweat’ and if you are not sure, try a tester M&M.  The ugly ones are perfect for snacks and samples!  (***NOTE: Milk chocolate will take longer to melt while white chocolate will melt quickly).

Remove from oven and immediately place an M&M on top of the chocolate pushing it down. Refrigerate until set.

Store in airtight container in the fridge of the freezer.

Active Adventures in Door County October 6, 2012

I finally have some time to sit down and share some of my Mom and my weekend adventures in Door County, Wisconsin.  The weather was superb and there are so many opportunities to be outside.  We took FULL advantage of them!  We brought up our bikes, and I had new hiking boots that I was eager to try.

Sunday morning, we woke up early, ate breakfast on our back balcony, and then wandered over to the local coffee shop in Fish Creek called Linger.  They had a festive fall menu and we made a few new friends while we waited for our lattes.

Afterwards, we grabbed our bikes and made our way north about 1 mile to the entrance of Peninsula State Park.

You might remember this path from THESE PICTURES.  It’s amazing what a difference a few weeks can make in terms of leaf color and temperature.

After our bike ride, we changed quickly and headed out for lunch.  Then drove east to the lake for some hiking at Cave Point in Jacksonport.  This is one of my favorite places to hike in Door County.  The BOY and I first hiked here last summer and again earlier this summer.

It was gorgeous hiking along the bluffs and caves and then along the beach at Whitefish Dunes State Park.  We then celebrated with a wine tasting at my favorite Door County winery, Stone’s Throw Winery.

We packed a lot into our first full day!  I didn’t even include all of the shopping we did (being that it was the Fish Creek Inside Out Sales weekend).  My mom and I fell into bed fairly early because we had another adventurous day ahead of us!
