Why I Love Triathlons! May 15, 2013

If someone had asked college Jen to do a triathlon, she probably would have laughed in your face or called you ridiculous…most likely both.  Although I have always been a runner, I hadn’t owned a bike since elementary school and my swimming skills consisted of sitting on a float at the indoor lazy river on Sundays with my hungover friends. TRUE STORY!

If you read my running history, then you have some idea of how college Jen grew into a half marathoner and eventually a triathlete over the last 10 years.  I’ve completed 4 sprints and 1 Olympic distance triathlon since falling in love the sport in 2010.  Truth be told, my initial motivation was…well, if my younger brother can do, so can I.  And last year, I beat him in a race (sorry kid!).

The idea for this post came to me during Monday’s BRICK workout.  With my first triathlon of the season rapidly approaching (less than 4 weeks away…yikes!), I was excited to get back into my training schedule.  As I was riding, I started thinking about what makes a BRICK workout so exciting and why it is I keep sign up for these demanding races. 

So without further ado…

 

The Top 10 Reasons Why I Love Triathlons

 

1. They make me feel strong and capable

If you can swim, bike, then run with a smile on your face, then can’t you take on anything?

2. I remember to treat my body well

This means eating right to fuel long workouts, getting plenty of rest, and dealing with stress.

 

3. They challenge me both physically and mentally

Anyone who runs knows that it is as much of a mental challenge as it is physical. Rising to that challenge is an indescribable feeling!

4. Triathletes are a warm and welcoming crowd

I love meeting other athletes, especially during local races.  Before my first triathlon, I went swimming in Lake Michigan to face my fear of open water.  After 15 minutes of wrestling into my wet suit, I was beyond intimidated before even sticking a toe in the water.  The nicest man (and fellow triathlete) talked me through it, gave me tips, and gently encouraged me.  That was the day that I learned that finishing just one race makes you part of a supportive community.

 

5. Training makes for good dinner party conversation

People are amazed to discover my triathlon hobby.  I think because they don’t realize that anyone can complete a sprint triathlon, you just have to train.  Before I knew anything about tri’s, I was always interested in what motivated someone to try this race and what the training looked like.  There’s always a lot to talk about in regards to equipment, workouts, and chaffing stories.

 

6. They give my weekends direction

I am motivated to get up and at ‘em Saturday morning when I know that I have a scheduled workout to do.  They get my day started and the weekend started right! (See Number 1)

7. Cross training prevents injuries and boredom

Each day is a different combination of running, cycling, and swimming.  For me, this prevents burn out because if I don’t want to swim, I can grab my bike and head outdoors and if I’m not in the mood to run, I know where to find the pool.  Cross training (along with yoga) keeps my muscles balanced and prevents overuse injuries.

 

8. It’s a healthy hobby that gets me outdoors

I’ve never been very crafty and don’t collect coins or stamps.  It’s good to have something non work related that interests and challenges you.  It’s even better if it supports a healthy lifestyle!

9.  I learn something new each time

I am a total rookie at the sport and love soaking in the knowledge of experienced triathletes and learning tips and strategies along the way.  In every race, I face a new fear (hi, open water!), overcome an obstacle, and push myself farther.  Although I still haven’t learned to braid my own hair : )

 

10. My entire family gets involved

My brother and mom have both done tri’s and my dad is the best photographer out there.  The BOY is the first one to put my bike on the car in the morning and has the strength to take it off after the race when I am heading straight for the shower.  There’s always someone to celebrate with me after a nap.  This upcoming triathlon will be really fun when the BOY and I host our families for a Father’s Day BBQ after the race.

Happy Mother’s Day!  How’s your day going?

I spent the most fantastic day with my parents.  We started with a long walk through the forest preserve following some paved and some off roading paths.  Then devoured a delicious lunch before stumbling into the GAP outlet.  We finished the afternoon with a grocery cart filling trip to Woodman’s.  With the sun shining and the conversation flowing, it really doesn’t get much better than this!

 

Unless of course you count yesterday’s fun family BBQ!

 

Sadly there are no pictures of the event but plenty of stories that will be circulating for months : )

The day started off early and innocent enough with the first of two trips to Starbucks for tea (me) and a breakfast sandwich (the BOY).  Then I boarded the train for the city.

When I arrived, I was nose deep in almost finishing this book.  When I exited the train station, I saw this spectacular view of boats cruising down the river.

It was amazing to see the passengers bundled up and sipping their morning coffee while we watched and waved from the bridge.

A few blocks down, I spotted this colorful 2 wheeled three dimensional art work.

And stopped for another warm beverage before arriving at my final destination.

Since I was early, I had an extra fifteen minutes to sip and read (this time really almost finishing my book).  I ended up reading the last 15 pages this morning.  This dark, twisted, thriller is a good read, so definitely add it to your summer list!

A few weeks ago, my brother and some friends and I decided to volunteer for St. Jude at the American Beer Fest.  As my brother said, ‘this is combing two things that I like…beer and volunteering!’  It really was a win-win!

We arrived at 10:30am, so the venue was still pretty quiet.

Well into the afternoon, the sun came out from behind the clouds and the stadium was packed with beer drinkers.  Our job was to promote St. Jude while having fun, playing games, and handing out prizes.

I spent most of my day at the football toss.  I couldn’t figure out why I woke up so sore this morning.  I don’t think it was spending 4 hours of my feet, but squatting repeatedly to retrieve the footballs from the floor.  I probably did hundreds of squats yesterday! 

 

When we were done volunteering, we had time to actually check out the beer fest before heading up to Lakeview for a pre Mother’s Day BBQ with our families and friends.  The entire evening was a blur of eating, drinking, talking, sharing stories, catching up, and just enjoying being together!  It was a BLAST!

 

This weekend was an awesome way to quick off the summer season.  Luckily, I have tomorrow to recuperate : )

So truth be told, I don’t really understand the whole hashtag thing, but I think my grandpa deserves one!

Why?  Not just because he is turning 101 years old this weekend!

But because he exercises every day, still drives, has a great sense of humor, surrounds himself with friends young and old, is thoughtful and caring, tells stories of the old country, stays strong and independent, and is somewhat of a legend in these parts with all of the stories that my family tells about him (basically to everyone we meet)!

Speed and Snow March 6, 2013

Do you like to add speed and hill work to your training?

Me?  Not so much!

 

But there’s nothing like running around an indoor track to motivate me to do speed work.  Because let’s be honest, there’s only so many trips around a 1/12 mile loop a person can make before going crazy!

Yesterday morning, I decided to beat the storm to the park district track.  I’ve been alternating 35-40 minute speed workouts (depending on how many times I snooze) with varying intervals to avoid boredom.  Yesterday, I took a tip from the treadmill queen herself and used my music to fuel my intervals.  My legs were sore from CrossFit as I kicked into a fast pace to the beat of the music.

Compared to my usual intervals, these were shorter but more frequent.  I wasn’t even thinking about time as I watched the snow piling up on the cars in the parking lot and I rocked out to some oldy but goodie music.  Confession, I haven’t updated my ipod in like three years.  I am adding that to my to do list!

After my workout, I drove back home to get ready for work.  My cheeks were bright pink and my body so hot that I totally fogged up my windows.  Since everyone seemed to have a snow day, the roads were empty allowing me an easy commute to work.  My work day was cut short due to the snow, and I certainly didn’t complain when I arrived at my parents’ house before 5pm.  They were wonderful hosts as always!  My Dad made stirfry for dinner and my mom poured the wine.  Even more exciting, we booked our tickets to Florida for the end of April.

I must say that the box jumps combined with the speed work have left my legs burning with every squat and step today, but I am not complaining…I love the burn!  I am hoping that adding intervals this winter will help me reach my goals to PR a half marathon, beat my 2011 Shamrock Shuffle time (that’s next month), and squeeze into those skinny jeans!

 

My favorite Speed Workouts

*I typically run but have also used the stationary bike or done walk/run intervals

 

90 second/90 second run/sprint intervals

60 second sprint/2 minute recovery intervals

Ladder training 15-15/30-30/45-45,etc. and then work your way back done

Music Intervals at a fast pace, then sprinting for short durations during the chorus

 

Looking to do more speed work, Caitlin just posted 3 Workout Ideas for a Speedy 5k.

This was my first addition towards the Ironman March challenge.  Since there was no way I would be counting laps, I am guessing my distance to be around 4.5 miles based time.

 

Ironman March Goal

Swim 2.4 miles

Bike 112 miles

Run 26.2 miles

 

I seem to be a little bit more on track for a half Ironman this march, but we’ll see what these next few weeks bring!

Slow Cooker Turkey and Bean Chili January 20, 2013

We haven’t made chili in a few weeks, so it was time to grease up the crockpot and chop up some veggies.

I found a wonderful looking chili recipe in Clean Eating Magazine.  I picked up all my ingredients at the store last week, so that I could get right to work Saturday morning.

Unfortunately, I didn’t have white beans (kind of a big deal since it is in the title of the original recipe), but I knew that black beans would be a fair substitution.  I was able to find tomato puree (I’ve never used that in chili before), and decided to use sweet potato instead of white potatoes for taste and nutritional value.

I like to slow cook on low heat.  I don’t know much about slow cookers of the past but I think that my crockpot is super strong and therefore I can cook something on low (8-10 hours) for only 6 hours and have a thick bowl of chili.

After a few hours, my chili was smelling good but not as thick as I would have expected.  I added in the roasted corn.  Yes, it appears that microwaving a premade bag of roasted corn could be considered cheating, but when I saw this in the frozen section, I knew it would make life this recipe MUCH easier.

A few more hours back in the crockpot with some additional seasonings, and I had a THICK and smoky chili!

I was even more surprised to see how much thicker my chili was when I poured myself a bowl for lunch today.  Although I shouldn’t be too surprised as soups and chilies usually taste even better the second day.  I think some of my substitutions changed the flavor of the recipe as written, but I am totally digging this colorful chili.  The sweet potatoes add the right amount of sweetness that compliment the smoky corn.  Covered in avocado, this was a filling lunch after this morning’s challenging Hot Yoga class.

Meanwhile, the BOY grilled up some burgers for our Dad’s who came over to watch the Indiana v Northwestern basketball game today.  It took a little convincing but the BOY braved the cold (it was in the 30’s) to make juicy burgers for the guys’ lunch.  He even took the time to make roasted mushrooms and caramelized onions to go with the burgers.

We had a wonderful afternoon relaxing in the living room, devouring our lunches, chatting about sports, and telling stories.  This was the first time that just our Dads came over and it was an awesome way to spend the afternoon.  The boys were more than happy to save room for dessert, Peanut Butter Bon Bons.

And the Dad’s even took a few to go home.  FYI, the BOY has decided that the vanilla coated bonbons taste even better than the chocolate ones in case you are already making your Valentine treat list!

I know it sounds crazy, but I could totally go for another bowl of chili for dinner.  Maybe that’s because we are watching the football playoffs and chili just seems appropriate : )

Turkey and Bean Chili with Roasted Corn

Adapted from Clean Eating Magazine

 

Ingredients

1 1/2 pounds lean ground turkey breast

4 cloves of garlic, coarsely chopped

1 yellow onion, coarsely chopped

1 large sweet potato, peeled and cubed (can sub in min red skin potatoes halved per original recipe)

1 red bell pepper, coarsely chopped

2 cups low sodium chicken or veggie broth

1 can black beans, rinsed (original recipe calls for navy beans but any white bean will work)

1 cup tomato puree

3 tbsp chili powder

1 1/2 tsp Italian seasoning

1/4 tsp oregano

1/2 tsp red pepper flakes

1/4 tsp fresh ground pepper

salt to taste

3 medium cobs of corn or 2 cups frozen and thawed corn kernels

 

Directions

In a large skillet, heat oil or cooking spray over medium heat.  Add turkey and cook, stirring frequently until beginning to brown, about 10 minutes.  Add garlic and onion, stir and cook for 5 minutes until soft and well cooked.

Transfer turkey mixture to slow cooker sprayed with cooking spray.  Add potato, pepper, broth, beans, tomato puree, and all seasonings.  Stir and cook on low (6-8 hour setting) or high for closer to 3 hours.

Meanwhile, if using corn cobs, char on grill or over grill pan.  When cool, shave kernels from cob.  About 1 hour before finished, stir in fresh or microwaved corn and cook until potatoes are soft and chili has thickened.

Store in airtight container in refrigerator or freezer.

 

Bye Bye Bears and Brownies January 3, 2013

It was a sad Sunday watching the Giant’s and Bears win their games, being forced to cheer for Green Bay, and then the Bear’s didn’t make it to the playoffs.  The saddest part, no more Sunday Funday.  I mean, yes there is still football on Sundays but with my #1 and #2 teams out, I’m not as interested.

Good thing we have Indiana Basketball to keep us busy : )  I recently found this picture and thought it was really funny (and not only because of this awesome sweatband)!  It was taken in NY and I’m rocking my first Bear’s gear!

 

From Football –> To Brownies

 

I’m sure you noticed these mouth watering brownies on my December 31st postWhen I was in Florida, my aunt and I sat down to read through some of hers and my grandmother’s old recipes.

It was so special to spend this time with my aunt browsing through the huge pile of cookies, cakes, casseroles, noodle puddings, and cheesecakes and learning more about her (and my Dad’s) mother.  One thing I learned…my Grandma LOVED her chocolate!   When my Mom and I did our holiday baking in my kitchen, we filled the day kitchen tales from her mother too.

One of the recipes my grandma used to make that my aunt often makes now is brownies.  So when the BOY requested brownies for our NYE dessert, I was excited to make this recipe for the first time.

The recipe calls for a 13×9 pan, but I knew that many brownies would be dangerous, so I halved the recipe and used a smaller pan.  This is still too many brownies for 2 people, but we are always happy to share!

Per the BOY’s request, I didn’t add any nuts or chips, so these brownies are super fudgy with a nice, smooth texture.  And, they pack plenty of rich, chocolaty taste.

But I just couldn’t resist a little flair…I’m sure you’re not surprised : )

So I drizzled some white chocolate across the top of the cooled brownies.

It took some serious willpower not to dig right in and try these brownies immediately.  But we had the most amazing dinner ahead of us, so we were able to wait.

Grandma’s Brownies

Adapted from BAKER’S One Bowl Brownies

 

Ingredients

 

4 oz. BAKER’S Unsweetened Chocolate

1 cup (2 sticks) butter

2 cups sugar

4 eggs, lightly beaten

1 tsp. vanilla

1 cup flour

Optional: 1 cup coarsely chopped pecans, walnuts, chocolate chips, etc

 

Directions

Heat oven to 350°F.

Spray a 13×9 inch pan with cooking spray.

Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted.

Blend sugar with the eggs and vanilla. Stir into chocolate mixture.  Add flour and nuts (if using); mix well. Pour into prepared pan.

Bake 30 to 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely before cutting to serve.

Note: If you like a thicker brownie, I would recommend following the recipe as written but using a smaller (9×9 or 8×8) pan.  If you want a less fudgy brownie (I’m not sure why you would), use only 3 eggs.

Gently Guide Yourself Back to Center January 1, 2013

Considering one year ago, the BOY and I were spending our New Years weekend packing for this incredible vacation, I’m feeling like I should be pulling out my suitcase.  Not this year!  Instead, I am packing away my tanks and shorts and rediscovering adorable sweaters and scarves.

 

Although this year has been full of some amazing opportunities and accomplishments, it has also been a challenging one!  I have felt off balance for most of the year and this is apparent in my workouts, eating habits, and overall energy levels.  As a whole, I really have so much to be grateful for.  The health and support of my wonderful family, the love and laughs I share with the BOY, a rewarding job, and close and loyal friends.  But my day to day rhythm is a bit out of sync and has been for most of the year.  For this reason, I am ready for the fresh start that 2013 offers.

For the past few years, I have been writing a Why Not? List at the start of each year.  In 2011, I had Start a Blog on that list!  As I look through the 2012 list, I see some successes and accomplishments, a few ‘almosts’ (I’m talking about you half marathon PR), and some ‘haven’t even thought about it since January 1st’.  Oopps!  As I head into 2013, I think that I will only be able to  achieve the things on my list if I get ‘right with myself’ first.  This means that I have a few things to figure out in order to get myself back into my groove AND my skinny jeans.

 

Since I’ve spent the last few days on my couch, I’ve had plenty of time to reflect on the year and think hard about what I want to do in the upcoming year and more importantly, how I want to feel.  The first change that I need to make involves my diet.  Ahh…the dreaded ‘D’ word.  I believe I have commented on this before, but when it comes to diet, I like this definition from The Kind Diet , ‘a way of living, or thinking, a day’s journey’.  No restrictions or stigma attached…it’s just the foods we choose to eat.  When I first started this blog, I was highly focused on Clean Eating.  I read about it, I blogged about it, I cooked clean, and I felt great.  In this past year, I have lost site of eating clean.  It started gradually, a vacation dessert here or some processed snack there, and eventually disappeared from my radar.  I think that stress and lack of motivation played a huge role in this shift.  I still cooked plenty of clean meals, but was eating and drinking more than enough junk in between.  Not surprisingly, I put on weight, my skin broke out, my energy levels sunk, and my clothes don’t fit as well.  I have enough perspective to know that weight gain doesn’t define me and that I have plenty of wonderful things going my way, but deep down I know that this is not the way that I want to feel.  And so I am making the CHOICE to focus my diet on real, clean foods, that my 100 year old grandfather would recognize.  I also know that limited dairy works best for me and my tummy!

The next piece that needs to fall into place is the ‘M’ word…Motivation!  What will motivate me to make healthier decisions when it comes to food?  First off, I know that I will feel better!  Secondly, but close behind, my health.  Maybe it’s because I’m in my 30’s or some of the realities that sunk in when I was sick a few years back, but I want to be healthy and active as I age.  I seek a quality of life free of metabolic disease and excess medications.  And lastly, there is a vanity component.  I want my clothes to fit well so that I feel confident in them.  I want to be proud of my muscles, showing off ripped arms in a tank.  And in the short run, I’d like to feel good in my bathing suit when the BOY and I got to Florida for a wedding in February.

 

I appreciate you sticking with me through this wordy post.  I wanted to share my recent struggles and step out of my comfort zone in case there are others who feel similar or you have successes that I can learn from.  Also, I felt it was important for me to sort through some of my thoughts and feelings to build momentum for the upcoming year.  Does this mean that you won’t see any more chocolate on my blog?  Heck no…I have a brownie recipe coming your way!  I love to bake and will continue to do what I love.  It just means that I need to manage my portion control better.

 

I am confident that clean eating will support the exercise goals that I have and will make the difference in me reaching my half marathon personal record that I struggled with this year.  I also know that it will improve my energy levels and allow me the clear mindset I need to make some important professional decisions in the upcoming months.

I hate to bore you with more words…I’m a visual person and love pictures, but thought it would be good to make this post complete with a review of December’s goals.  If you are interested in reading more, here are some of my favorite books on the topic and here are a few more of my raw thoughts.  I had some more activity planned for my 2 week winter break but between my awesome trip to Florida and then this sad sinus infection, I didn’t accomplish all that I had hoped.  With that said, I am happy to end the year with a low stress level (the BOY and I have been really enjoying our downtime stuck in the house) and a clear plan for the year ahead.

 

I’m sure you’re wondering about the title of this post (why hasn’t she gotten to the point yet?).  These words were spoken during my New Year’s Eve Day yoga class.  I love the compassion and control she implied when she stated ‘Gently Guide Yourself Back to Center’ as we returned to standing from a back bend.  It struck me as I realized that it is exactly my plan for the new year!

 

 

December Goals

Avoid holiday weight gain

     -Even with a vacation and being sick, I have managed to avoid the dreaded holiday weight gain.  I haven’t lost any weight, but stayed at a steady place, which wasn’t easy with all the sweets in our house : )

Twice Weekly Yoga (1x studio and 1x home)

     -I started off strong but then because of vacation and my sinus infection, I have failed.

Strength training! Must figure out the gym situation for the winter.

     -I have had a few training sessions with the trainer, but have not been doing much more than that.  I do have a game plan for when I get my energy back to try some new local classes and gyms.

Just when you thought you couldn’t handle one more cookie or chocolately sweet recipe before the holidays, I have another installment of Crunchy Cookies to share.

This recipe is similar to one you’ve seen on the blog before, but the toffee adds enough of a twist that I thought it was worth sharing.

The other reason I just HAD to share this recipe is because everywhere I bring it, people rave about it.

Plus, these cookies are loaded with chocolate, pecans, and toffee, a beautiful combination…especially in this crispy cookie bark.

And if you are looking for a last minute dessert to make for the holidays, here it is.  If you really want to make cookies, but aren’t in the mood to scoop lumps of dough onto cookie sheet after cookie sheet, this one slab recipe bakes up quickly and once cooled, you just have to break it into dozens of pieces of crunchy cookies.

As we speak this posts, I will be high above the clouds flying home to celebrate the holidays and enjoy the rest of my winter vacation.  I don’t have to be back at work until January (Hooray!).  It was a special treat to be in Florida with my Dad, Aunt, and Grandpa.  There were so many exciting things to do that the 5 days just flew by!  I’m looking forward to my next trip down south!

Toffee Cookie Brittle

From Big Fat Cookies by Elinor Klivans

 

Ingredients

1½ cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1½ sticks (12 tbsp) unsalted butter, melted and cooled slightly
1/2  cup granulated sugar
1/3 cup packed light brown sugar
1 teaspoon vanilla extract
1 cup crushed toffee (ie Heath or Skor)
1 cup coarsely chopped pecans

 

Directions:

-Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

-In a medium bowl, combine the flour, baking soda and salt and set aside.

-In a large bowl, whisk the melted butter, brown and granulated sugars and vanilla extract until smooth, about 30 seconds. Using a large spoon, slowly add the flour mixture and stir just until incorporated. The dough should appear to be smooth. Stir in the toffee and pecans.

-Spoon the dough onto the prepared baking sheet, leaving at least 1 inch of empty space on all sides. Use the palms of your hands to pat the dough into an even layer about 1/2 inch thick and 13 by 9 inches. The dough should be patted out slightly thinner at the edges.

-Bake the brittle until it turns golden and the edges turn light brown, about 19 minutes. The brittle may be fairly soft when warm but will crisp as it cools. Let the brittle cool on the baking sheet for 10 minutes.

-Using a large metal spatula to guide it, slide the large cookie onto a wire rack to cool completely. Don’t worry if the cookie breaks; it will be broken into irregular pieces, anyway. Break the cooled cookie into 2- to 3-inch pieces. The cookies can be stored in a tightly covered container at room temperature for up to 4 days.  Freezes well.
