Meal Planning with Tony’s and the Grill May 13, 2013

It’s the BOY’s first real day off all semester and so no surprise he headed straight for the grill!

This afternoon, he made us a healthy lunch!  After which we drove off to check out the latest new grocery store in town.  We are so spoiled with a newish Whole Foods, the brand new Mariano’s, and now a Tony’s!

I’ve heard only great things about this store which is located throughout the Chicago area, and we now have one of our own.

Their produce is extensive and well priced.  The BOY found himself lost in the meat aisle and the seafood had my mouth watering.  Speaking of watering mouths, this expansive pastry counter was filled with rich, colorful, and decadent sweets.

It didn’t take the BOY long to pick out a few of the 79 cent treats for dessert tonight.

We left will a full cart for a more than fair price!  The BOY went straight to the back yard to prepare tonight’s pulled pork in his smoker.  I got comfortable in the sun with a new lighter book by one of my favorite chick lit authors.

It was a successful start to the week, and meal planning is a cinch now that the BOY is doing most of the work on the grill!  Although sadly tonight, his smoker yielded smoked pork instead of pulled pork.  I had an easy substitute frozen veggie burger, but I could tell the BOY was disappointed at he at his smoked pork sandwich.  Next time, I will go back to this crockpot pulled pork recipe which was incredible!

Happy Mother’s Day!  How’s your day going?

I spent the most fantastic day with my parents.  We started with a long walk through the forest preserve following some paved and some off roading paths.  Then devoured a delicious lunch before stumbling into the GAP outlet.  We finished the afternoon with a grocery cart filling trip to Woodman’s.  With the sun shining and the conversation flowing, it really doesn’t get much better than this!

 

Unless of course you count yesterday’s fun family BBQ!

 

Sadly there are no pictures of the event but plenty of stories that will be circulating for months : )

The day started off early and innocent enough with the first of two trips to Starbucks for tea (me) and a breakfast sandwich (the BOY).  Then I boarded the train for the city.

When I arrived, I was nose deep in almost finishing this book.  When I exited the train station, I saw this spectacular view of boats cruising down the river.

It was amazing to see the passengers bundled up and sipping their morning coffee while we watched and waved from the bridge.

A few blocks down, I spotted this colorful 2 wheeled three dimensional art work.

Since I was early, I had an extra fifteen minutes to sip and read (this time really almost finishing my book).  I ended up reading the last 15 pages this morning.  This dark, twisted, thriller is a good read, so definitely add it to your summer list!

A few weeks ago, my brother and some friends and I decided to volunteer for St. Jude at the American Beer Fest.  As my brother said, ‘this is combing two things that I like…beer and volunteering!’  It really was a win-win!

We arrived at 10:30am, so the venue was still pretty quiet.

Well into the afternoon, the sun came out from behind the clouds and the stadium was packed with beer drinkers.  Our job was to promote St. Jude while having fun, playing games, and handing out prizes.

I spent most of my day at the football toss.  I couldn’t figure out why I woke up so sore this morning.  I don’t think it was spending 4 hours of my feet, but squatting repeatedly to retrieve the footballs from the floor.  I probably did hundreds of squats yesterday! 

 

When we were done volunteering, we had time to actually check out the beer fest before heading up to Lakeview for a pre Mother’s Day BBQ with our families and friends.  The entire evening was a blur of eating, drinking, talking, sharing stories, catching up, and just enjoying being together!  It was a BLAST!

 

This weekend was an awesome way to quick off the summer season.  Luckily, I have tomorrow to recuperate : )

1. Yes it’s been raining again.  No I don’t want to talk about it!

2. I was in a continuing ed class today (and will be again tomorrow), so I decided to take the train into the city.  The only thing worse than driving in the snow is driving through Chicago traffic in the rain, so I was happy to be sitting quietly with my new book.

3. Due to some crazy city traffic, I missed my first train this afternoon.  I ran up just as it was pulling away and got a nasty blister on my left heel.  It wouldn’t be a big deal if I wasn’t running a half marathon on Sunday. Yikes!  Luckily, I had my book to keep me company while I waited for the next train.

4.  I picked up my packet for Sunday’s half marathon tonight.  I am excited for my new yellow race shirt, but a little nervous for Sunday’s race.  Between fatigue, my new blister, and a knot it my back, I’m not quite sure how it will go.

A Case of the Mondays January 14, 2013

The BOY starts school tomorrow, but before he dives back into the books, we had a fun morning adventure in Evanston.  Every time we go to Evanston, we talk about how we wish we lived here (and hopefully one day we will).  I didn’t take tons of pictures today but we did stop at a few of our favorite places.

I had a gift card for Barnes and Noble and of course, I can never say no to some new cookbooks.  Luckily, the BOY and I just got a new bookshelf that is currently empty!  I had planned all day to go to a yoga class this afternoon, but I seem to have crashed.  I blame the antibiotic, and since I took my last one this morning, I plan on being back in full energetic swing this week!  So while the BOY headed off to the library to read 40 pages for his first day of class, I watched Grey’s Anatomy and Scandal while folding over a week’s worth of laundry.  Not the exciting Monday or blog post I had hoped for.  But with these new cookbooks, I will have some more exciting and healthy recipes to share SOON!

Healthy New Year Soup January 2, 2013

I am swapping the sugary sweet holiday baked goods in for some veggie packed recipes.  Well, at least one veggie packed recipe.  I woke up January 1st with a craving for breakfast.  I whipped up a batch of these Banana Flax Pancakes.

The BOY and I spent my last day of winter vacation laying low, and watching some college football.  Despite finishing my antibiotic, I am still nowhere near 100%.  This definitely frustrates me (who wants to be sick for over a week?), and I just don’t have my usual energy levels.  So I took advantage of my last day home finishing my third book this break, Emily Giffin’s Where We Belong (which in my opinion is her best book to date!) and cooking up some food for the week ahead.

We did make one trip out of the house to the grocery store to stock up on some fresh produce for the week.  Since my soup pot was out and clean after NYE dinner, I figured some veggie soup was in order.  I haven’t made a plain veggie soup in some time.  Mostly, because my Mom makes some wonderful soups and is always happy to supply me with her leftovers.

I know that I have commented before on my huge soup pot.  It was a gift to me along with some lessons in soup making when my Mom and our friend Beth came to visit me in Memphis a little over 5 years ago.

Beth makes some wonderful soups, and it was with her in mind that I picked up some cabbage along with all my other veggies for this Healthy New Year Soup.

I think once you’ve made a few veggie soups, you get a feel for what veggies to add, when to add them, and what spices work best.  Needless to say, I ‘m not there yet!

So I just sorta winged it, chopping up veggies and sprinkling in spices to create this veggie packed soup.  The outcome was a thick and hearty soup guaranteed to keep you warm in a winter chill and help you get started with your healthy new year.  However, this doesn’t make it easy to write out a recipe.  I’m not quite positive what I did, if it is typical of making soup, but I know the results worked.  I will do my best to share the recipe but feel free to add in any thoughts or suggestions (I mean you Beth!)

This soup freezes well, so I know that I am well stocked with healthy options for the next few weeks (unless you want some soup and in which case I am happy to share).  Sadly, I downed tonight’s dinner without getting a better photo of my colorful concoction.  What can I say…after my first day back at work, I was starving when I walked in the door.

So I overcompensated by taking plenty of pictures of tomorrow’s lunch!  I must say that it was tough to get up today.  When my alarm went off at 6am, I had NO idea what the noise was (I hadn’t heard it in 2 weeks).  Even my car seemed a little perturbed to be up and at ‘em before the sun.  But it was nice to be back at work catching up with my friends after the break.  This means that my posts might be a little less frequent as I adjust to the work/life balance and for right now I am done writing because I started book number four, Eat & Run (Thanks Brittany for the suggestion), and I am eager to get back to it.

 

 

Healthy New Year Soup

 

Ingredients

1 onion, chopped

4 cloves of garlic, minced

10 stalks of celery, chopped

1 package of mushrooms, chopped

1 head of cabbage, chopped

6 carrots, pealed and chopped

4 cups low sodium vegetable broth

6 cups of water

1 28 ounce can of diced tomatoes, drained

Sea Salt (to taste)

Seasonings (I used a mix of basil, garlic, and a veggie mix)

1 bag frozen green beans

1 bag frozen zucchini (fresh if you can find it, but it didn’t look good)

 

Optional: Add your favorite seasonal veggies and sub in frozen as needed!  Other ideas include okra, corn, peppers, beans, etc.

 

 

Directions

Spray the bottom of a large soup pot with cooking spray and heat over medium heat.  Add in onion and garlic.  Stir until soft and fragrant (about 5 minutes or so).  Add in celery, mushrooms, and cabbage.

Stir often as flavors begin to blend and veggies soften (another 7-8 minutes).

Add in veggie broth, water, spices, and tomatoes.  Bring to a boil (this takes time with a huge pot).

Add in frozen veggies (whatever you want, but I chose beans and zucchini…okra is good too!) and simmer for 2-3 hours.

Freeze in air tight containers and you’ll be set for the winter!

A Cold Front December 23, 2012

Along with most of the country, the cold front has arrived in Florida.  Yes, the Floridians have busted out their winter’s best sweaters, socks, and jackets.  When I was little and we used to come down here every winter break, rain or shine, my brother and I would be swimming in the pool.  As an adult, I am not so brave!  Instead, my morning exercise consists of a walk with my Aunt and Dad in long sleeves

I’ve been trying to get myself into a senior yoga class, but I have been met with some resistance.  I fully understand that I will be sitting in a chair throughout the class and love the idea.  When I explained to some friends my plans for winter break, they immediately referred to the book turned movie In Her Shoes where Cameron Diaz hides out at her grandma’s retirement community.  Yes, my trip is something like that EXCEPT that everyone I know in Florida is super active and exciting.

It’s 5:00 somewhere…Chicago to be exact!  Then went out for an amazing Italian dinner.  Tomorrow, the weather is supposed to get back up in the 70’s (Hooray!) so I can hit up the pool one last time before heading home!  But, I will be back indoors at some point tomorrow because I am eager to get my hands on this pile of recipes from my aunt and my grandma.  I’m hoping to scan as many as possible into the computer for upcoming baking projects.

So I have been trying to sit down and write this post for like a month (it was totally a March goal that never happened).  Yikes! 

 

Over the years, I have read many cookbooks, healthy living blog posts, books, and magazine articles relating to food, nutrition, eating, superfoods, moderation, weight loss, and other related topics.  One common thread that I repeatedly read was the importance of chewing.  Sounds crazy, right?  Don’t you have to chew to eat?  After reading about this for the third or forth time, it really got me thinking.  How much do I CHEW my food?  The answer is embarrassing…I am a total mouth stuffer!

This realization was eye opening for me.  I always thought that I was doing it right, preparing my meals at home, rarely eating out, and being in tune with hunger.  The fact that I often eat standing, on the go, during a work meeting, or as quickly as possible and that this was impacting my healthy lifestyle and weight loss never crossed my mind…until last month!

 

Breakfast is a quick meal, usually eaten in standing with one foot out the door.  Lunch is stuffed into my mouth quickly and efficiency during a mid-day work meeting.  Dinner is typically eaten in sitting, but when it is 8PM, I am HUNGRY and the food disappears QUICKLY! 

 

 

Why is this a problem?

 

Digestion begins in the mouth

Chewing allows you to slow down your meal and enjoy the flavors

Chewing is key in the absorption of important nutrients

Savoring your food is important during every meal

Satiety is linked to chewing and the amount of time spent eating

I eat way too much food because I don’t register when I am full

 

 

I think that recognizing my lack of chewing is the FIRST step.  Hooray!  However making changes is hard.  I don’t know that I will ever wake up early enough or give up my morning run to have a sit down breakfast during the week and lunch meetings are not a choice, just a reality.  However, there are many dinners and weekend meals that deserve my time and appreciation where an easy change in eating habits (that begins with this realization) can lead to improved digestion, nutrition absorption, and possible weight loss.  For all of these reasons, I am willing to give CHEWING a try!

For me, recognizing my patterns has already made a difference in how I eat many of my meals.  I am hoping over the next few months to create some new habits that support my clean and healthy eating goals.  This knowledge and understanding is just the beginning!

Hungry Day March 24, 2012

I have been talking about this day for months.  Okay, not this day exactly but the weekend that the Hunger Games movie would come out.  I have to admit I was probably pretty late on the Hunger Games bandwagon, but I joined with full force and have read all three books. I loved them!  And by the time I finished book 3, the trailer for the movie was already out.

A little confession, a coworker lent me the People Magazine special edition which I read cover to cover on Thursday night.  I learned that Jennifer Lawrence beat out tons of other actresses for the part by auditioning the scene at the reaping (which I have heard is very emotional) and many of the actors and actresses were fans of the book before landing their roles in the movie.  To eliminate any chance of disappointment, I made reservations at the fancy theater one town over earlier in the week (iPic Theaters).

They were sold out of the best seats (pictured above), but I was able to get two regular, yet still slightly fancy seats for the 8:00 show.  The BOY and I headed out early for a cocktail and dinner.

Between the new movies and the basketball games, the theater’s bar/lounge was packed.  It is definitely a neat place to hang out before a movie, and it was still pretty crowded when we left at 10:30pm.

I promise I won’t spoil anything for your, but my initial feeling towards the movie…Well Done!  I thought the scenery was beautiful (I did not picture the forest that green), the costumes were exciting, the special effects surprising, the music was moving, the acting was good, and the story true to the book.  I had a few moments where I wanted to pause the movie and shout out to the audience back story from the book that was left out, but instead I just whispered it to the BOY.  I was interested to hear his thoughts having not read the book and just come along for the ride (aka to support my excitement).  He thought the movie was good but that the some of the emotional scenes were brief and could have been better supported.  I enthusiastically filled him in on missing pieces and plot plus Katniss’s every thought during our 10 minute ride home.  The movie is definitely worth seeing, but moves quicker than the book (especially in the arena), so I would recommend reading the books first.  I always find it hard when you get to read and feel all of the main character’s thoughts in a book and that can’t be translated to the screen.  However, additional scenes sharing more of the country’s history and the character’s thoughts were done well and followed the book.  Overall, it was a great movie, and I am even more excited for the next two!

 

It’s been a long day full of fun activity, so I am happily off to bed!

Grocery Store Finds March 18, 2012

It is no secret that I absolutely LOVE the grocery store.  Whole Foods and Trader Joe’s are two of my favorite places to spend some money!!!  Here are a few of my latest finds…

 

 

This cereal is from Whole Foods.  You can use it as a warm cereal, in a smoothie or even as a base for oatmeal cookies.

La Granja is a Trader Joe’s favorite.

I discovered the Zebra bottle last summer, and the tempanillo is smooth and fantastic.  For around $5 each, these red wines taste way above their price!

Whole Foods Go Raw Cookies…lemon and ginger are my favorite!

Dark chocolate is a must have in this house.  Trader Joe’s has some fantastic vegan options.

Which I discovered while I was stocking up on my new summer favorite, TJ’s Blanc de Blanc.  You HAVE to try this refreshing sparkling wine.

Picky Bars can be ordered online.  I read about them in a magazine which recommended these natural bars for post-exercise recovery.

I am a huge fan of this unsweetened ice tea.  It is perfect for breakfast or a sunny day outside.

This Almond Smooth came highly recommended (I am yet to try it), but I decided to go with the chocolate flavor.  I can’t wait to have my first glass!

I’m sure you have seen this LWYD favorite all over my blog.  I always keep a box in the freezer for when I need a quick and healthy breakfast.  I add in a banana, chia seeds, and almond milk for my typical pre-race meal.

You may have seen these in your grocery store freezer, but they are about $1 cheaper at Trader Joe’s.  They are jam packed with veggies, not fillers.  My favorite way to eat them is broiled or grilled, but the microwave will work too if you are short on time.

Since we’re talking about the freezer, I always keep one of these available for a quick and tasty appetizer.  I promise you will love it and so will your guests!

I’m in a Funk

These past few weeks, I have been in a total funk.  Although my weekend in Las Vegas was a nice break from ‘funky’ town, after a long week at work, I am back in my funk.

For me, a funk is defined as:

-Feeling really tired all of the time

-Not into working out

-Being too busy to do the fun things that I love

-Feeling too tired to do the fun things that I love

-Eating more chocolate than kale

-My SI back pain has returned

-Being grumpy

-Lacking motivation

 

I think that this list perfectly describes my mood this week.  I haven’t worked out since my run in Las Vegas, and I have been working crazy long hours at work.  When I get home, there is little to no time for socializing, blogging, reading, baking, or sleeping.  And I have been so exhausted (even with 7-8 hours of sleep) that I have not been running before work.  The result of this is that I feel sluggish and fatigued, I’m slightly irritable (the BOY can confirm this), and my pants are feeling tighter than usual.  I woke up this morning and decided that I’m ready to bust out of my rut and start feeling like myself again. Work is going to continue to be busy until the end of the month (I have another 12 straight days of work/class coming up) and I’d like to figure out a better balance starting NOW.

 

I don’t typically dive too deep into the emotional effects of trying to keep myself balanced because let’s be honest, no body wants to read a downer post. Plus, workouts, recipes, and pictures are much more fun. But, I think ‘funks’ are a normal part of life and I’m hoping for some suggestions on how to get back to my active and energized self.  I take responsibility for the not-so-healthy decisions I have been making, like an extra glass or two of wine here and a day on the couch inside of the gym there.  The thought that I have not been eating much meat and dairy which could affect my energy levels has crossed my mind (I am eating eggs and seafood).  But before I dive into meatloaf and ice cream, I thought I could these funk busters a try.

Yoga has a way of challenging me emotionally and physically.  I leave class with an honest understanding of what is really bothering me and a sense of strength having just tackled difficult poses in a hot room for 75 minutes.  My mom and I have a yoga date set for this Wednesday night.

Down Time

The BOY and I spent some quality time last night preparing dinner on his new grill and watching an intense Indiana basketball game (they won and meet Syracuse in the Sweet Sixteen).  A quiet Saturday night is a calming way to start the week, especially when I get to bed early.  I slept for 10 hours last night!!!

Writing

Surprisingly, writing about my funk has been quite therapeutic and looking through our fun Vegas pictures as I added them to the blog has definitely made me smile.

Working Out

I have a session with the TRAINER scheduled for Monday morning!  And Chicago is finally thawing out as bike season approaches.  When I run outdoors, I don’t take a head set.  I truly enjoy the quiet time alone with my thoughts.  A lot of new ideas and decisions are made during my runs.

Organizing

When I saw this quote in a magazine, I knew it described me exactly.  Blame my Virgo side or OCD tendencies, but getting my bags unpacked, my house cleaned up, working through my To Do list, throwing laundry in the machine, and straightening up the house always has a way of calming me and getting me mentally ready for the week ahead.

Kitchen Time

A new recipe is always a fun distraction for me.  A fun holiday bread or anything with a cake mix is a great way to spend the afternoon in the kitchen.  Coming soon…I can not wait to make THESE BROWNIES!

Planning

With a half marathon, a 10 miler, and a triathlon rapidly approaching, it is time to get serious about my schedule.  I always do well with everything written down on my calendar. Just like with To Do lists, I like to cross off my workouts after I have completed them.

Reading

I am nose deep in another Phillipa Gregory book that I would love to finish.  I also have a magazine subscription addiction so there is a lot of Hollywood trash and recipes to read through, plus my fun new cookbooks.

Quality Time with Friends and Family

I have a lunch date with a close friend today.  I know catching up on this beautiful day will put me in a good mood and reminds me how lucky I am to be surrounded by such amazing people.

So there it is, my recipe for a balanced life.  This list, combined with the fast approaching spring is exactly what I need to head into this next season feeling like the best version of myself.

 

A healthy start to the day: I got  myself outside for a steady, not too fast, but not too easy, 6.5 mile run along the path.  There were tons of walkers, runners, and bikers out sharing this sunny morning.  I came home feeling the good kind of tired, the I just ran 60 minutes in the heat kind of fatigue.  I am refueling with a green smoothie and off to take a shower and begin my day.  I am looking forward to a happier and healthier week!
