It’s been way too long since I’ve been to a yoga class!

Which is why despite staying up late drinking wine with the neighbors last night, I woke up this morning determined to go to yoga.  Upon waking, I immediately began to rehydrate, chugging tons of water.  My studio has a few classes on Sundays, so it was easy to get to the 11:30am class with a fantastic instructor.  The moment I walked into the studio, I knew I’d made the right decision.  A few minutes later, I was laying supine on my mat, excited to be back, and starting to sweat in the warm studio.  I love the atmosphere at my yoga studio, and it’s because of scheduling conflicts that I don’t get there more often.  Today’s class started slowly with breathing in stand and then we plunged right into sun salutation while The Lumineers Stubborn Love played in the background.  During an early downward facing dog, the instructor came up to me and gently rotated my shoulders.  ‘Good’, she said, ‘Now drop the tension in your shoulders’.  Ahhh…I let the tension release from my shoulders and my entire body.

 

Truth be told, there hasn’t been a lot of tension this weekend.  The BOY and I intentionally didn’t make plans knowing we wanted to celebrate the end of his second year of law school with some time together.  We were moving non-stop yesterday and had the best day!  And today was another unscheduled day.  I let this feeling of weightlessness carry me through the rest of the class which included some challenging poses (like bound Warrior III).  By the end of the class, I was both exhausted and exhilarated.  I soaked up the peace of shivasana before heading back into the sunshine and driving home.

This afternoon turned into an impromptu BBQ with the neighbors (planned last night over wine).

We pulled together some tables, cracked open cold beers, and ate grilled meat and veggies.

For dessert, I made one of the BOY’s favorite recipes…Caramel Brownies!

I just searched my blog and couldn’t find this recipe anywhere.  Is it possible that I’ve been blogging for this long without sharing this recipe with you?  There’s no way!  If you find it on the blog, please let me know!  I swear I remember bragging about how much I love these caramel bits!

They make these brownies super easy!  Which is why I could pull them together after yoga this afternoon.

And as you head into the week, remember to ‘drop the tension’.  I know that’s my game plan!

 

Caramel Brownies

 

Ingredients

1 (14 ounce) package individually wrapped caramels, unwrapped (if you can find the little caramel bits, that’s the way to go!)

1/3 cup evaporated milk

1 (18.25 ounce) package chocolate cake mix (my favorite is dark chocolate or triple chocolate!)

3/4 cup butter, melted

1/3 cup evaporated milk

1 cup semisweet chocolate chips

 

Directions

Preheat oven to 350 degrees F (175 degrees C). In a heavy saucepan, combine caramels and 1/3 cup of evaporated milk. Cook over low heat, stirring constantly until smooth; set aside. Grease a 9×13 inch pan.
In a large bowl, stir together the cake mix, melted butter and 1/3 cup of evaporated milk by hand until dough holds together. Press half of the dough into the prepared pan, reserving the rest.
Bake for 10 minutes in the preheated oven. Remove from the oven and sprinkle the chocolate chips over the crust, pour the caramel mixture evenly over the chips. Crumble the remaining dough over the caramel layer and return to the oven.
Bake for an additional 15 to 18 minutes in the preheated oven. Cool in refrigerator to set the caramel before cutting into bars.

 

Eat warm or frozen!

So it’s Monday evening and I just realized that my most recent post is Five for Friday…yikes!  Not my most successful blogging weekend : )  No worries…I will try to make up for that in this post!  Thanks everyone for putting up with all of my complaints about the weather!  I understand that we don’t even have it the worst here in Chicago.  Good news…there are finally signs of spring.

Yesterday, I was on the move from morning to night!  But I did get in a long run.  It’s incredible how hard it is to sit in class all day after being on my feet all week long at work.  If I weren’t meeting a friend to run, I would have cancelled, so that was great planning on my part.  We started running a little before 6pm.  The sun was still shining and the weather warm.  We ran a little over 90 minutes with a few water breaks.  I don’t typically run in the evenings.  One reason is that I get tired and want to cancel, but the other reason is that my tummy often gives me trouble.  I stayed away from all of my usual tummy triggers yesterday in hopes of a strong run.  Sadly, my stomach did not agree with the run and I still had chills and pain 2 hours later.  Boo!  I climbed into bed around 10pm.  Needless to say, I didn’t set an alarm for this morning, figuring I’d be awake and ready for CrossFit or yoga at 9:30am.

When I finally opened my eyes and dragged myself out of bed, it was 10am.  I slept for 11 hours!!!  My stomach was feeling better but not great, so I went with a green purple smoothie for breakfast including everything but the kitchen sink (ie kale, cucumber, Greek yogurt, frozen berries).  The BOY had another pre-finals day at the library planned, but we did head out for a quick and early lunch at Panera.

This is the BOY’s dessert : )  It was so cute that I had to snap a photo!  We swung by the grocery store for ingredients to make turkey burgers tonight on the grill.

While the BOY finished off his burgers, I prepped my bike for the first ride of the season!  Yes ladies and gentleman, I can finally stop complaining about the weather and get out on my bike!

My first plan was to ride my road bike, but the tires were flat and not filling up well.  My hybrid was the perfect back up.

The weather was gorgeous and the path alive with walkers, runners, and bikers.  I was so happy to be out on my bike…even as I pedaled hard with tired legs against the headwind.  I made it almost all the way around the path before I was stopped by the flood.

There was no way to make it through here, so I turned around and went back along the path and then cut across the road to make it home with enough time to change and grab a snack before my eye doctor appointment.

Talk about packing a lot into the day!  I had to snap a selfie of how ridiculous I looked driving around in the sunshine with dilated eyes.  I took my tired self back home for laundry and other household things that didn’t happen this weekend.  Around 6pm, the BOY returned from the library and heated up the grill.

I am off to Florida at the end of the week, so there’s not much going on in terms of meal planning this week.  Our Santa Fe Turkey Burgers turned out awesome!  The BOY made them so there’s not much of a recipe to share, but I tried my best below!

Santa Fe Turkey Burgers

Created by The BOY

 

Ingredients

1.25 lbs ground turkey meet (we used 93/7%)

Chopped onion and green peppers

Corn

Spices (the BOY was in charge of this area but it looked like garlic powder, sea salt, worchester, and soy sauce)

Feta (optional)

 

Directions

Mix all ingredients together.

Form into patties.

Grill or bake in the oven.

 

Out Like a Lamb March 31, 2013

This title seemed only fitting after my initial March post titled In Like a Lion.  Thankfully, after a few snow storms and quite a chilly month, March did come to an end more like a lamb than a lion.  With 50 degree weather this weekend, the BOY and I have been able to walk along the path out back and clean off the grill.  And since today is Easter, we have a nice relaxing day planned!

I got a rejuvenating 9+ hours of sleep last night and woke up right before 8am without an alarm.  I made a filling breakfast omelet before going to a 10am yoga class.  I was super excited to see that my yoga studio was open today and happy to leave the house while the BOY got busy with his meat smoker (see previous post for fully explanation).  This morning’s class was tough yet revitalizing.  I don’t think I have sweat that much in months!  At the end of our relaxation, I would have been happy to stay on my mat soaking in the good vibes and peace throughout the room.  When I left the studio, the sun was shining and for the first time, it smelled like spring!

 

The BOY and I spent the day at home hanging out and enjoying some much needed down time!  I finally had time to upload music to my new computer (I desperately need to update my ipod) and set up my training schedule for spring.

For dinner, we made a full chicken on the grill.  Ok, I just said we, but the only thing that I did to help was find the spices in our spice cabinet.  The BOY did all of the work and was quite proud of himself!

As the month comes to an end today, here are a few accomplishments worth mentioning…I increased my activity level, adding some speed intervals and took care of myself with a massage.  The BOY and I created some successful meal plans and hosted a dinner party.  There was a ton of basketball thrown into the mix too!  I got to the pool twice and made some decent headway towards IRONMAN March.

Unplug more often

     -Although I posted quite a bit this month, I did take time to unplug from reading and writing, which I think has helped me de-stress, especially during the workweek.

The BOY’s New Hobby

New at our house, that I can share with you now that my anger has somewhat dissipated, is the smoker that I returned home to find after spending two days at my parents in the beginning of the week.  Apparently the BOY thought we needed one of these in our backyard and ordered it from Amazon.

What is hilarious is that the smoker is the talk of the backyard neighborhood.  All of the guys have been stopping by to inspect the smoker and talk meat.

You probably think that I am kidding, which is why I had to capture it on film!  I, on the other hand, am not so amused!  Meat just doesn’t get me all worked up, so instead I spent the afternoon baking cookies and spring cleaning.   The good news is that along with playing with his smoker, the BOY also cleaned up his grill and refilled the propane tanks.

Need I also add, that the BOY has been talking about his smoker all week long, including a few phone calls to me at work to talk meat.  In one, he actually asked me if I would come home and clean out the inside of the chicken he just bought?!

Ahhh…But if this new hobby means he will be making more dinners, I could, perhaps get over it!

After a week, I have bid farewell to my puppy friends for about 24 hours at home before I am on to my next adventure.

The BOY was happy to greet me at the door to discuss our plans for the day.  A gorgeous 60 degree Sunday with no Bears game left endless possibilities.  If you’re a frequent reader of the blog, then you won’t be surprised by our decision.  We made a quick stop at the farmer’s market, then on to Mariano’s, and home for an afternoon out back.

Making the Most of Leftovers August 28, 2012

My morning started off quite nice with a complimentary beverage of my choice from Starbucks.  Well, actually when my alarm went off, I had no idea what the noise was.  After a 4 day weekend, I guess I forgot the sound of my alarm : )  I did get myself up and out for a 5 mile run.  The weather was perfect for a cool morning jog, and my toe held up just fine.  I’m still not particularly fast, but running feels good!  I’m ready for my toe to heal and get back to building up my miles, but I will just have to be patient. 

After the run…came the free venti cinnamon dolce birthday latte!

It was a sweet way to start the day, but even sweeter was this cool sign and these adorable gift bags waiting for me at my desk!

It’s people doing yoga in the shapes of the letters. I loved it!  My birthday buddy (who decorated my desk) got me the cutest pair of Lululemon socks (one says RUN and one says FAST) and homemade granola, which is the best granola I’ve EVER eaten.  I’ll have to ask her to anonymously leave me the recipe soon, since I won’t find out who it is until December.

After a happy day at work, I whizzed home to pick up the BOY and head out for the Mariano’s Grand Opening!

The store was jam packed with fresh and colorful produce and people.  It was late, but we explored all of the aisles impressed with the selection…especially in the bakery and bulk bins!

By the time we got home, it was after 8:30pm, which is why I won’t take too long for the rest and the real purpose of this post.  As I’ve mentioned when I described this incredible salad, we had a whole bunch of leftovers from this weekend’s BBQ.  Yesterday, I decided to turn everything into enchiladas.  In the past, I’ve only made enchiladas with red sauce, but I got it in my head that I wanted to try making a Mole Sauce.  I looked online for a few different recipes.  The catch…I didn’t want to have to run out to the store.  I found a few recipes and chose one from Positively Vegan.  I had everything in the house that I needed to make a quick sauce, and all my leftovers to turn into enchiladas.

Instead of carob, I used cacao, and then threw everything into the blender.

I was dong well until the last ingredient…diced tomatoes.  How is it possible that I didn’t have a can of diced tomatoes in my house???  I did have some farm share tomatoes, so I added those instead.  My mixture was thick and brown. 

However, here was only one problem…I had no idea what mole was supposed to taste like.

I proceeded forward making the enchiladas…beef, rice, and cheese for the BOY and chicken and leftover veggies for me.

I poured the sauce over the top and loaded the BOY up with cheese.

The BOY walked in the door from school just before I pulled dinner out of the oven.

I was nervous to serve my first mole, but it actually turned out REALLY good.  The BOY ran off with his plate before I could get a good pictures, but once he tasted the enchiladas, he was surprised (that I had made the sauce) and impressed with my effort.

I think a full can of tomatoes would have balanced out the chocolate flavor a bit, and I picked up 3 cans at Mariano’s this evening…just to have in the house for the next time!

 

Typically, I am happy to eat leftovers for a few days, and I don’t think about spicing them up.  This was a creative way for me to use all of our meat, tortillas, and cheese, and it was a HUGE success!  I was so proud of my dinner, that I had to share the mole sauce with ya’ll tonight!  It is so easy to fill tortillas with whatever leftovers you have in the house, cover them in this delicious sauce, and bake with cheese.  Enjoy!

 

What is your favorite way to use leftovers???

 

 

 

Easy Mole Sauce

From Positively Vegan

 

In your blender, place, but don’t blend:

1/2 cup raw cashews
1 cup vegetable broth
The broth will soak the cashews for a few minutes while you add everything else.

 

Next add all of the following to the blender:
3/4 cup carob powder (carob is a legume, and contains protein)
2 tsp garlic powder
1 tsp onion powder
3 tsp cumin
1 1/2 tsp chipotle powder
2 tsp chili powder
1/2 tsp cinnamon
1 1/2 tsp sea salt
3 T agave syrup or nectar
1/4 cup olive oil
juice of 1 lime
1 can (14.5 oz) diced tomatoes (the tomatoes go on top to keep all the powders from "poofing" out the top of the blender)

Blend until very smooth. Pour as much as possible into a saucepan or bowl.
Add 1/2 cup water to the blender, put the lid on, and shake it up to loosen all the last bits of sauce. Stir the water/sauce into the rest of the sauce, and you won’t waste a bit.

 

Note: If making enchiladas, spread sauce on bottom of pan, place stuffed tortillas over the top, cover with mole sauce and cheese and bake at 350 degrees for 20 minutes.

It’s been a fun week of Birthday celebrations beginning with a special Birthday/Graduation party on Tuesday.

Then on Thursday, a coworker who happens to have the same birthday as me, brought me these beautiful flowers from her garden!

Friday, we got to spend the day with my brother and his girlfriend (who has the same birthday as me) including a fun nice dinner out at Cooper’s Hawk.  Yesterday, we hosted my friends and their adorable kids over for a Fiesta BBQ.  It was a team effort as my friends brought lots of delicious food, including a homemade guacamole.  I made some of my summer favorites including this cream cheese corn dip and Wendi’s zesty black eyed pea salad.

Everything turned out incredible! The BOY marinated the meat for a day and it was so flavorful and juicy in the fajitas.  I love the DIY set up for a fiesta BBQ because it is so casual and easy.

They turned out soft and sweet, and I highly recommend that you make them!

I’m such a huge fan that I’m gong to share the recipe with you RIGHT now, so here it goes…

The bars are the perfect combination of crispy on the edges, but soft and chewy on the inside, with tons of wonderful flavors (I used white chocolate, milk chocolate, and butterscotch).  You could even add some nuts if you’d like, but they certainly don’t need them.

I skipped the chocolate glaze due to time, but I would recommend giving it a try!

These bars are totally birthday worthy and they freeze well so preheat your oven and whip up a big batch!

Your friends will be thrilled with the results.  And you will thank me!

 

 

Triple Chip Blondies
From Our Best Bites

Ingredients

1 cup (2 sticks) salted butter
2 cups light brown sugar
2 teaspoons vanilla
2 eggs
2 cups all-purpose flour, lightly spooned into a measuring cup and leveled with the back of a knife
2/3 cup chocolate chips, plus 1/3 cup for drizzling on top
2/3 cup white chocolate chips
2/3 cup peanut butter chips or butterscotch chips
1 teaspoon coconut oil or shortening

 

Instructions

Preheat oven to 350. Spray a 9×13″ pan with non-stick cooking spray. Set aside.

Melt the butter. Combine in a large mixing bowl with the brown sugar. Add the vanilla and the eggs and beat on medium speed until combined. Add the flour and mix until just combined. Add the chocolate chips (excluding the 1/3 cup reserved chips), white chocolate chips, and peanut butter or butterscotch chips and mix until combined.

Transfer the batter to the prepared pan and bake for 20-25 minutes or until golden brown on top. Allow to cool completely. When cool, combine the reserved chips and the coconut oil or shortening in a small freezer zip-top bag, seal it, and heat it in the microwave in 15-second increments, mashing the bag with your hands until the chocolate and oil are smooth (repeat as long as necessary). Cut a small corner out of the bag and squeeze the melted chocolate over the baked blondies. Allow to cool completely before cutting into bars.

Oreo Peanut Butter Pie August 25, 2012

Do you ever look at the clock in the middle of an intense team Wii bowling competition to discover that it is 4:15 in the morning?!  Yikes!  That is totally what happened to me last night this morning when the BOY, my bro, and his girlfriend spent hours in front of the TV bowling.  We didn’t even believe my brother when he said the time.  Luckily by 4am, I was drinking water but that didn’t make me any less tired when I woke up after only 5 hours of sleep.  I think I could have slept all day.  I would have loved to, but the BOY and I are hosting an End of the Summer BBQ today, so there was lots of cooking and cleaning to do.  We had so much fun with the Fiesta themed for Memorial Day that we decided to do it again!

I had a sous chef (my brother) to help me with some of the chopping while I made breakfast.  Since the 4 of us spent the day hanging out in suburbia yesterday, I didn’t get a lot of prep done, so this morning, I was up and working in the kitchen right away.  The first item on my agenda was dessert.  I have an old recipe for an incredible no bake pie that I thought would be perfect for the warm weekend, but I was a little ambitious choosing to make my own pie crust, instead of buying one (like I always have in the past).

Since I was at TJ’s, I picked up some of their Oreo-like cookies.  Believe it or not, I have never tried Joe-Joe’s before.  I have been missing out for sure!

The crust turned out thick, tasty, and was exactly what I needed for this pie!

The next layer involves fudge topping!  My recommendation is to microwave the fudge so that it is easy to spread.

And although the recipe says you don’t need to use the entire container, I HIGHLY recommend it!

The pie was a huge hit at our fiesta.  I haven’t made it in so long and it was even better than I remember!

We had such a fun day celebrating the end of summer with my friends and their families!  And, it was an early enough night that the BOY and I can crash and catch up on some sleep : )

 

 

 

 

 

Oreo Peanut Butter Pie

From Cooks.com

 

1 Keebler ready-made Oreo pie crust
1 (4oz) box instant French vanilla pudding mix
1 cup cold milk
3-4 tablespoons creamy peanut butter (or more if you like…which I do)
1 jar chocolate fudge sauce
1 regular container Cool Whip (thawed)

 

Have pie crust ready. OR, if you want to make your own crust, combine 1 box of crushed cookies with 1/4 cup melted butter.  Mix well and form into a pie plate with your hands.

Carefully spread/frost the bottom and sides of pie crust with fudge sauce (if really thick microwave for a few seconds). You won’t need to use the whole jar (but I think that you should!).

In a bowl, blend instant pudding and 1 cup milk using a whisk.

Using an electric mixer, add the peanut butter (mixture will be thick). Spoon onto the fudge layered pie crust.

Top with Cool Whip. Garnish with any Oreo crumbs from the pie crust.

Refrigerate.

The TOUR is over, but sadly my class is not : (

Even though I’m back in class tomorrow, I stayed up a little later than expected tonight to watch the exciting finish to the Tour de France.  It was fun to view this impressive race over the past three weeks, and I have a whole new knowledge and appreciation for this international spectacle.  I am all hyped up for the Olympics and more importantly, my first (and most likely only) triathlon of the summer next Sunday!

 

Although this weekend has not been ideal for training (or blogging), I have been able to get in some bike rides (Hello Bike Commuter!) and runs.  I am slacking on the swimming (story of my life), but since there is no expectations or pressure for this race, I’m not stressed, just excited!

 

Speaking of stressed, spending 6 days in class (instead of my usual 3 day weekend) has been rough on me.  Luckily, the BOY was in charge of dinner tonight, and he prepared us an amazing dinner or shrimp fajitas.  He made one spicy version using a salsa pepper from my friend’s garden and one less spicy.

We even had enough leftovers for me to take for lunch tomorrow.  For dessert, we had a special treat.  The red, white, and blue bottle was awesome looking and the champagne even better!

Since I’m in charge of the course breakfast tomorrow, I made a fruit salsa and by request, some fig and date bars tonight before settling in to fold some laundry and finish the tour.

The fig bars also made a great dessert tonight!

I apologize for post of random thoughts, but that is just where my brain is at right now.  I think they call that fried!  Only two more days of class and then two more days of work and then we are off to Wisconsin for the triathlon weekend.  Hooray!
