It’s been way too long since I’ve been to a yoga class!

Which is why despite staying up late drinking wine with the neighbors last night, I woke up this morning determined to go to yoga.  Upon waking, I immediately began to rehydrate, chugging tons of water.  My studio has a few classes on Sundays, so it was easy to get to the 11:30am class with a fantastic instructor.  The moment I walked into the studio, I knew I’d made the right decision.  A few minutes later, I was laying supine on my mat, excited to be back, and starting to sweat in the warm studio.  I love the atmosphere at my yoga studio, and it’s because of scheduling conflicts that I don’t get there more often.  Today’s class started slowly with breathing in stand and then we plunged right into sun salutation while The Lumineers Stubborn Love played in the background.  During an early downward facing dog, the instructor came up to me and gently rotated my shoulders.  ‘Good’, she said, ‘Now drop the tension in your shoulders’.  Ahhh…I let the tension release from my shoulders and my entire body.

 

Truth be told, there hasn’t been a lot of tension this weekend.  The BOY and I intentionally didn’t make plans knowing we wanted to celebrate the end of his second year of law school with some time together.  We were moving non-stop yesterday and had the best day!  And today was another unscheduled day.  I let this feeling of weightlessness carry me through the rest of the class which included some challenging poses (like bound Warrior III).  By the end of the class, I was both exhausted and exhilarated.  I soaked up the peace of shivasana before heading back into the sunshine and driving home.

This afternoon turned into an impromptu BBQ with the neighbors (planned last night over wine).

We pulled together some tables, cracked open cold beers, and ate grilled meat and veggies.

For dessert, I made one of the BOY’s favorite recipes…Caramel Brownies!

I just searched my blog and couldn’t find this recipe anywhere.  Is it possible that I’ve been blogging for this long without sharing this recipe with you?  There’s no way!  If you find it on the blog, please let me know!  I swear I remember bragging about how much I love these caramel bits!

They make these brownies super easy!  Which is why I could pull them together after yoga this afternoon.

Caramel Brownies

 

Ingredients

1 (14 ounce) package individually wrapped caramels, unwrapped (if you can find the little caramel bits, that’s the way to go!)

1/3 cup evaporated milk

1 (18.25 ounce) package chocolate cake mix (my favorite is dark chocolate or triple chocolate!)

3/4 cup butter, melted

1/3 cup evaporated milk

1 cup semisweet chocolate chips

 

Directions

Preheat oven to 350 degrees F (175 degrees C). In a heavy saucepan, combine caramels and 1/3 cup of evaporated milk. Cook over low heat, stirring constantly until smooth; set aside. Grease a 9×13 inch pan.
In a large bowl, stir together the cake mix, melted butter and 1/3 cup of evaporated milk by hand until dough holds together. Press half of the dough into the prepared pan, reserving the rest.
Bake for 10 minutes in the preheated oven. Remove from the oven and sprinkle the chocolate chips over the crust, pour the caramel mixture evenly over the chips. Crumble the remaining dough over the caramel layer and return to the oven.
Bake for an additional 15 to 18 minutes in the preheated oven. Cool in refrigerator to set the caramel before cutting into bars.

 

Eat warm or frozen!

 

Out Like a Lamb March 31, 2013

This title seemed only fitting after my initial March post titled In Like a Lion.  Thankfully, after a few snow storms and quite a chilly month, March did come to an end more like a lamb than a lion.  With 50 degree weather this weekend, the BOY and I have been able to walk along the path out back and clean off the grill.  And since today is Easter, we have a nice relaxing day planned!

I got a rejuvenating 9+ hours of sleep last night and woke up right before 8am without an alarm.  I made a filling breakfast omelet before going to a 10am yoga class.  I was super excited to see that my yoga studio was open today and happy to leave the house while the BOY got busy with his meat smoker (see previous post for fully explanation).  This morning’s class was tough yet revitalizing.  I don’t think I have sweat that much in months!  At the end of our relaxation, I would have been happy to stay on my mat soaking in the good vibes and peace throughout the room.  When I left the studio, the sun was shining and for the first time, it smelled like spring!

 

The BOY and I spent the day at home hanging out and enjoying some much needed down time!  I finally had time to upload music to my new computer (I desperately need to update my ipod) and set up my training schedule for spring.

For dinner, we made a full chicken on the grill.  Ok, I just said we, but the only thing that I did to help was find the spices in our spice cabinet.  The BOY did all of the work and was quite proud of himself!

As the month comes to an end today, here are a few accomplishments worth mentioning…I increased my activity level, adding some speed intervals and took care of myself with a massage.  The BOY and I created some successful meal plans and hosted a dinner party.  There was a ton of basketball thrown into the mix too!  I got to the pool twice and made some decent headway towards IRONMAN March.

Unplug more often

     -Although I posted quite a bit this month, I did take time to unplug from reading and writing, which I think has helped me de-stress, especially during the workweek.

I hope so!  If not, there is plenty of time to get started on your new year’s intentions!  I woke up this morning to another sunny day with a fresh coat of snow covering my car.  The first thought that ran through my head was…I wish I had snow shoes!  I would go again this morning exploring the forest preserve by our house.

Instead, I headed off to my weekly Hot Yoga class.  I stayed up late watching the Indiana Victory last night, so I didn’t make it to my usual 10am class.  As I was walking in for the 11:30 class, I bumped into my Mom and a friend who had just finished their class.  It was fun to chat about yoga and homemade energy bars, and my Mom mentioned that she was jealous that she missed yesterday’s snow shoeing adventure.

After class, the BOY and I made a quick run to the crazy crowded grocery store.  Being that it is Superbowl Sunday, I was not in the least surprised.  We are spending the evening at my best friend’s house and had a few last minute things to pick up.  It is no secret that I am a huge fan of football, and even though I have no strong feelings about the winner of tonight’s game, I am looking forward to a good match.  It is tough to talk Superbowl without bringing up food, so I want to refer you to THIS POST dedicated to football food and the 2012 Beer Bowl

I did make hummus and a new dip for tonight (pictured above with recipe to come).  However, we are doing something a little different.  We are straying away from traditional football food and having Indian food for dinner.  My best friend and I have been talking about getting together for Indian for weeks, so we thought it would be fun to combine the two events.

It occurred to me this morning that it is already February, and therefore, time to reflect on the previous month.

The month went by quickly, but really was a lot of fun.  I started the year with a clear head and some healthy soup!  I was nominated for the Liebster Award and shared some new info and old pictures.

 

I spent a bunch of time in the kitchen whipping up some healthy recipes…

I didn’t write any specific goals for January, but really just tried to find balance, stay centered and stress free, and return to a healthier lifestyle mentally and physically.  So far, I’d say that I am on the right track, and look forward to carrying this good feeling on to February.

Half Homemade January 26, 2013

Before I even start this post, I should warn you that this is my first time attempting to use Windows Live Writer on my new computer.  I have no idea how it will work because the BOY set everything up for me, and he doesn’t even know the name of my blog…LOL!  One of the things I still haven’t done is move my pictures and Eye-Fi onto this computer. I am so spoiled because my photos automatically upload, but I haven’t switched that around yet.  It’s on my list of things (along with update music and take car for an oil change) to do this weekend.

 

I must say that snow is much more beautiful in the day light and when you don’t have to commute to work.  The BOY and I were both up earlier than expected this morning.  After a simple breakfast of banana walnut oatmeal and Elixer, I hit the road for Hot Yoga.  The class was warm, intense, and rewarding.  I felt strong in my balance poses, lightness in Warrior II, and utter fatigue in chair pose.  I know that I have mentioned this before, but I really do feel different when my diet is clean.

After yoga, I picked up Mediterranean for lunch.  Our favorite place just happens to be on my way home from the studio.  Although their pita is amazing, I knew I had some sprouted wraps and homemade hummus at home.  I ordered my favorite Fattoush salad with grilled chicken with plans to create a half homemade lunch that was clean and satisfying.

While the BOY dug right into his lunch, I created 2 grilled chicken wraps.  One with garlic hummus and the other using this new Roasted Red Pepper Spread from the Forks Over Knives Cookbook that I whipped up earlier in the week.

Both wraps turned out incredible!  With my salad on the side, even the BOY commented about how good my lunch looked.

I’m sorry I didn’t get more pictures, but after this morning’s workout, I was starving!  I will tell you that this spread is really easy and versatile, and I would recommend using it to spice up your sandwiches.

I’m heading upstairs to pack and take a nap before heading into the city for a bachelorette party tonight.  See you tomorrow!

Roasted Red Pepper Spread

From Forks Over Knives

 

Ingredients

2 cups or 1 15- ounce can great northern beans, drained and rinsed

1 red bell pepper, roasted (I used jarred)

3 cloves garlic, peeled and minced

3 tbsp finely chopped dill (or 1 tsp dried)

Zest and juice of 1 lemon

Salt to taste

 

Directions

Combine all ingredients in the bowl of a food processor and puree until smooth and creamy.

Store in the refrigerator.

 

First Workout of the Year January 7, 2013

Finally!

I made it to Hot Yoga yesterday morning with my Mom!

I really haven’t done much activity the past few weeks, so I had to remind myself a few times during the intense class that it is okay to hold back and rest.  But I LOVED getting back into my weekly workout routine, and it was even more special to have my Mom yoga-ing right next to me.  After class, I tried to convince her to come to Whole Foods with me, but she was headed another direction in search of veggies for her own Healthy New Year Soup.

I picked up some fresh fruits and veggies to make one of Jenna’s hearty stews.

And then came home to chop veggies and warm up the crockpot.  Right on cue, the BOY started to smell the Indian flavors from upstairs and hollered down ‘Honey, what are you making? Smells Good!’

I’m hoping that he will dig right into the stew and won’t even notice the butternut squash.

Without interesting (to me anyways) football today, I was a little bit lost with what to do with my Sunday.  After I got my stew into the crockpot, I baked up some Pumpkin Pear Bread.  Then did a little bit of cleaning and organizing before settling into some comfy clothes on my couch.  I was really excited to finish my book Eat & Run, and it did NOT disappoint!

This recipe requires about 10 hours to get a thick and hearty stew.  Perfect for a Sunday!  The only problem…I was exhausted last night and not going to be able to stay awake until 10pm.

So I put the BOY in charge of unplugging the crockpot and putting my stew into the fridge before he came up to bed.

I was eager to see (and taste) the results this morning!

These pictures don’t even do it justice!  Not only is this the ideal stew texture, but the flavors are incredible.  Everything blends together marvelously, so you know what I will be eating for lunch today.  I love having a house full of healthy food options and fingers crossed, I will be getting in workout number 2 today!

 

 

Crock Pot Chickpea, Butternut Squash

and Red Lentil Stew

From Eat, Live, Run

 

Ingredients

1 yellow onion, chopped

1 tbsp olive or canola oil

2 large carrot, chopped

3 cloves garlic, minced

1 jalapeno, seeded and minced

2-3 tsp garam masala

1 butternut squash (about 3 lbs–average sized), peeled and chopped

1 28-oz can diced tomatoes in tomato juice

1 quart vegetable broth

1 cup red lentils

2 15-oz cans chickpeas, drained and rinsed

1-2 tsp sea salt (to taste)

 

Directions

Heat the oil in a large skillet over medium high heat. Add the onion, carrot and jalapeno and sauté for about six minutes. Add the minced garlic and sauté for 30 more seconds, and then add the garam masala, stirring well to coat. Take off heat.

Place the chickpeas, butternut squash, canned diced tomatoes, red lentils, vegetable broth and onion mixture in your slow cooker. Turn the heat on LOW and cook for 8-10 hours…the longer you cook, the thicker your stew will be.

Season with sea salt to taste and serve with minced cilantro on top (I didn’t do this). This stew freezes extremely well and will keep in the fridge for up to five days.

 

Change in Plans September 23, 2012

My mom, brother, and I have been talking about doing the Northshore Century bike ride today since…well…probably last year!  Although my mom and I weren’t planning on riding the entire 100 miles, we had hoped to get in a nice 50 or 60 mile ride.  My bike training has been fairly non-existent, but up until yesterday, we were still undecided.  I’m not a person who usually talks about a race and doesn’t follow through although I feel like there has been more of that this year.  Since I had talked and blogged about the ride, I didn’t want to totally abandon it.  However, it was obvious chatting with my mom on our way down to the city yesterday that neither one of us was feeling the ride.  Mostly, due to lack of training.  In my case, this is a combination of a broken toe not fitting into my bike shoes, travel, weekends in class, and an overwhelmingly busy life.  This last reason was the biggest decider in nixing the race in favor of meeting my mom for Yin Yoga tonight.

 

This decision allowed me to have a lovely no-pressure Sunday with no alarm clock, minimal time spent in my car (as opposed to driving the hour to the race start), watching the Bears, doing some laundry, and making veggie chili.  I also got took a 15 mile bike ride spending an hour along the forest preserve path admiring the contrast in colors and changing leaves.

Upon arriving home, I realized that I was much more in the mood for a 1 hour bike ride today than a 6 hour ride.  I made a green smoothie and settled in to cheer on the Bears, looking forward to a rejuvenating yoga class.

Since the BOY has been hard at work on a paper and a few speeches ALL weekend, it was easy to get away Sunday night to attend my studio’s Yin class.  I took this class a few weeks ago and loved it.  In previous classes, I have done some Yin style yoga but never an entire class.  If you’ve never heard of/tried Yin yoga, I will try to describe it to you.  During a Yin class, you spend most of the time in sitting or supine (laying down).  Whereas in typical yoga practice, your muscles are active.  During Yin, each posture is passive, held without muscle activation using breathing and gravity to move deeper into the pose.  Postures are held for a long time (up to 5 minutes) in order to stretch beyond your muscles, moving into your fascia and connective tissues as well.  The goal of a Yin class is to increase range of motion and flexibility and decrease stress.

Tonight’s class began with restorative bridge, which is one of my favorite asanas.  We continued the rest of the class on or next to the wall. 90 minutes later, my mom and I emerged feeling incredible and relaxed!  Yoga, especially Yin, is the ideal way to end your weekend.  You spend plenty of time stretching out the sore muscles that you’ve worked all weekend and mentally, ending with an extended meditation, prepares you for the week ahead.  My brother impressively rode 100 miles today, but my mom and I agreed that we were in need of a different kind of Sunday.  It was the perfect change in plans!

Tip Toe Pose June 29, 2012

The BOY and I had planned for another Friday of outdoor fun today.  However, by the time we got moving (I slept over 10 hours last night), the skies were starting to turn dark.

With the change in plans, I decided to go take a yoga class.  I try to get to a class at least once a week.  Last weekend, we were out of town (although we did do some yoga on the pier), and I won’t be able to go this Sunday because I am spending tomorrow night in the city with some girl friends.  So as the rain began to pour, I headed out to the studio for a noon class.  I was excited to see that the teacher was one of my favorites.  She always does a unique and challenging class and reminds us to stay present throughout (which I often need).  My intention for the hour was to forget any outside worries or stresses and enjoy spending my Friday afternoon at a yoga class as opposed to at work.

 

It’s a good thing the class was only an hour because I was sweating from every pore in my body. I think the last 7 days of exercise caught up with me a bit because my arms and legs were shaking in every pose.  The thunder rumbling above was almost surreal.  But I had a smile on my face and loved the feeling of inner peace I felt during the class.  We tried a new pose today (new to me anyways) called tip toe pose, using blocks to find balance and get into this hard position.

The instructor encouraged us to slowly remove one hand from the block and then the other to meet together at heart center.  She said that sometimes you fall, but that it is okay, we should just try it and see what happens.  I was able to remove my hands, one time for a second, the other for a few.  I wiggled and my ankle wobbled and when my hands returned to the blocks, they held on tight.  I had forgotten how much fun it can be to feel off balance.  I have been feeling stressed out lately (mostly work related), but during this pose, I was reminded that sometimes when in limbo we topple, but other times we learn something new.  It is not always bad to feel off balance (especially when you have blocks to rescue you).  New discoveries can follow these times of unease and opportunity for growth often emerges.

 

As the class wound down and we rolled back for shivasana, I was feeling more relaxed than I had all week.  The instructor reminded us that stress is temporary, the unease will pass, and that our essence will live on forever.  It was a beautiful lesson after a lovely yoga practice.  I felt thankful for being able to make it to class this week and spend some time dedicated to my mind and spirit.  My body got quite a workout too as I was still sweating when I got home!

Post workout, I was starving and I made a smoothie the moment I walked in the door.

In this mix:

1 handful spinach

1 cup coconut water

1 frozen banana

2 tbsp cacao powder

2 tbsp almond butter

Ice

This chocolaty combination of nut butter and banana is perfect for a refreshing and sweet smoothie!  If you haven’t tried cacao in your smoothies, I highly recommend it.  By this time, the sky was starting to clear and the BOY and I headed out for lunch and to do some errands in town, including the Farmer’s Market.  We picked up some fresh veggies for a grilled fajita dinner.

Take a look at my Wisconsin Weekend and Wisconsin Weekend Part II posts!

 

We enjoyed a spectacular weekend in Wisconsin, and I woke up Sunday morning feeling rejuvenated, yet slightly sad to be returning back to my work week.  Although I really do luv what I do, my days are busy and work can be exhausting (this doesn’t even include my workouts or commute), so I always appreciate a quiet weekend away to build my relationships and get active outdoors, especially when it involves the water!

I was one of the first to wake up on Sunday, but my Mom was not far behind.  We made some warm tea and headed down to the dock for 30 minutes of yoga.  The view was breath taking, not because it was any different than the day before, but more because of the calm, serene feeling the lake gave off as we moved through our poses focusing inward on our breath.  When we returned to the house, it seemed that there was some more activity.  The neighbor had found two baby raccoons causing quite a commotion with the dogs.

Throughout the weekend, there was a lot of discussion about healthy green smoothies for breakfast.  As everyone started to make their way downstairs, I was nominated to make a new smoothie recipe for whoever was brave enough to try it.  We had some awesome options for the smoothie (I love the maca!), and some old standbys (like kale and flax).

My Mom and I had planned on walking, but I was able to convince my biking buddy to hit the roads with me for one last hilly run before I left.  We ran 4 miles together, pushing hard the last 1/2 mile.  I ran up 3 brutal hills and my legs were tired and strong when I finished.  I slowly jogged back for my cool down where I found my Mom jogging in the last of her run.  She had a nice stride and looked strong as she pushed up the last hill.  Very impressive!

 

The BOY was back in his big chair reading, and I spent my last 20 minutes out on the lake for one last boat ride.  We packed up our belongings and hit the road for home.  I was trying to take some pictures of the ginormous hills that we had biked, but this proved hard to do in a moving vehicle!  Can you tell how steep they are?

I am already looking forward to my next weekend in Wisconsin (the BOY and I make it up that direction a few times every summer) to battle the hills, enjoy the tastes, spend time with friends, and ride the waves.  Until next time…

Power Yoga and Whole Foods March 3, 2012

I have been wanting to try out a Core Power Yoga class for many many months, but because most of the studios are located in the city, I haven’t gotten around to it. I have heard fabulous things about their classes and was interested in trying out Hot Yoga at another studio.  A friend of mine and I had plans for a running date this morning, but when the snow started to fall last night, we changed our minds, printed out FREE yoga coupons, and decided to try the 9:30AM Power Fusion class in Bucktown.

I started my day with the MOST AMAZING BREAKFAST before grabbing a travel mug of hot tea and hitting the road.  On Saturday mornings, it takes me no time at all to get into the city, which I love.  I had to take this picture of the Shamrock Shake poster to show the BOY!

We made our way over to the studio, which was gorgeous.  The staff was friendly and welcoming.  I had no idea what to expect from a Hot Power Fusion class as I have only done Hot Yoga at one studio.  The instructor encouraged us to set an intention early on, which is something I do at each yoga class.  She reminded us that our intention is important to bring our focus back to our practice when our minds begin to wonder (which mine often does).  With spring around the corner, I dedicated my practice at this new studio to new adventures and opportunities.  The class was challenging and rewarding, similar to my weekly class, but also a little bit different.

 

What was Different?

More natural light in the room

It might have been hotter, I definitely sweat more

Less time on core exercises (could be good or bad…haha!)

There were mirrors

The instructor prompted us to use an open mouth exhale to get rid of heat

 

What was the Same?

It was a quiet room

We did a combination of asanas, core work, and deep stretching at the end

The tempo and energy of the class

I felt amazing when I walked out the door!!!

 

It was a fantastic class led by an experienced instructor, and I truly enjoyed the Core Power Yoga atmosphere.  I am sad that I won’t be able to make it to any other CPY classes during my free week.  Although I am so happy with my local studio, it was fun to try something new.  After yoga, I was drenched with sweat and thrilled that I had remembered a change of clothes.  My friend and I had been talking about green smoothies, so we headed over to Peeled for a Rappers Delight (so yummy!).  I need to figure out to make this green smoothie at home!

We walked across the street to the biggest and coolest Whole Foods I have ever been to.  This is the same area that I explored on the  CHEW tour in the fall.  I haven’t been back to this WF since September and it still amazed me just as much today.  This store has a full bar, a huge array of seafood, beautiful produce, a significant wine and beer selection, a BBQ station, 4 different salad bars, and a sushi chef along with its already extensive selection of cheese, bread, and desserts and knowledgeable employees.

I could have spent the entire day here sampling food and taking pictures!  I was psyched to finally find the Kabocha squash that I have seen in many of The Kind Life recipes.

They also had one of my all time favorite Whole Foods premade salads, the vegan curry chicken salad, which I discovered years before I ever thought about giving up meat or dairy.

With vegetarian chicken, scallions, and raisins, this salad is absolutely amazing!  My local WF store doesn’t carry it, so I bought a whole container to bring home with me.

It is tasty as a cold salad, but I like it even better warmed up.  I paired it with a huge green salad and a side of WF veggies for a fantastic lunch, which was fun and healthy after my exciting morning in the city!

Tonight, the BOY and I are heading out to try a NEW local Mexican place, which is always a good way to spend Saturday night.

Snow Looks Better with Sunglasses On February 26, 2012

Doesn’t the snow just look more beautiful under a radiating sun.  My alarm woke me this morning, which was okay, because the sun was shining and I was meeting my mom for a much needed hot yoga class this morning.  For 2 weeks, I have been looking forward to my favorite weekend workout class.

This morning’s intention was to decrease stress and feel more relaxed.  Although I wasn’t totally relaxed as I was balancing on one foot between high lunge and warrior III, by the end of class, I felt calm, peaceful and a little bit tired.  My mom and I both agreed, this class was a tough one!!!  I was starving by the time I got to my car and happy to have packed a post-yoga snack.

Although it looks a little messy, this almond butter and apple pita totally hit the spot!

I headed out to pick up some groceries for the week.  There’s nothing like a crowded Costco on Sunday to kill your Yoga Buzz!

However, after a green smoothie, the Yoga Buzz was RESTORED!

In the blender:

A handful of spinach

1/2 frozen banana

1/3 cup frozen mango

1 cup almond milk

1/4 cup oats

This green smoothie is soo refreshing.  I love the mango…between that and the banana, no added sugar or sweetener needed!

Now that I have a stocked kitchen and a full tummy, it’s time to chill out a bit and play in the kitchen!  With a window cracked and the sun streaming in, I am digging this SUNday!  Now, what’s for dinner???
