Happy Weekend!!!

Even though it’s a short (only 2 day) weekend for me, I am a happy girl! Check out this beautiful Friday night dinner, the BOY and I just had.

I picked up some scallops at Costco, and the BOY threw them on the grill. Along with a fresh salad and grilled mushrooms, it was a healthy, easy, and satisfying dinner.

I was already thinking about dessert before I even walked in the door. Not tonight’s dessert exactly, but dessert for tomorrow afternoon when we are having some friends over for a BBQ. For whatever reason, these Chocolate Peanut Butter Bars popped into my head, and that’s where they stayed.

I just happened to have all of the ingredients in the house, and knew with our busy Suburban Saturday, there would be limited time for baking. BTW, the powered sugar totally missed the pre-recipe photo op!

These bars, which are sometimes called Buckeye Bars are quick and easy to make! You won’t even need to turn on your oven. And when the weather gets warmer, No Bake desserts are the way to go!


Your clean up time will take longer than your prep.

BUT, it is totally worthwhile, and you’ll need something to keep you busy during the hour the bars need to set in the fridge.

After a long week at work, some might not want to jump into the kitchen, but for some crazy reason, I seem to find it a good place to unwind. Especially when I get to lick a chocolate peanut buttery spatula!

Notes From the Kitchen:
-This recipe makes A LOT of bars, and you DO NOT want to see the nutrition facts! I thought about making a half batch, but I think I remember from the holidays (the last time I made them) that they freeze well. And, I know that this is one of the BOY’s favorite sweet treats!
-Also, I recommend using extra chocolate chips (one whole bag) in order to make a thicker chocolate layer!

Chocolate Peanut Butter Bars (aka Peanut Butter Bars I)

Ingredients
1 cup butter or margarine, melted
2 cups graham cracker crumbs
2 cups confectioners’ sugar
1 cup peanut butter
1 1/2 cups semisweet chocolate chips (use the whole bag!)
4 tablespoons peanut butter
Directions
In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan.
In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

Yum! Scallops are one of my favorite foods, and you can’t go wrong with a chocolate & PB dessert.
