Spinach Stuffed Mushrooms January 1, 2012

These mushrooms come together quickly and are perfect for a special occasion ie New Years Eve.  You can make them in smaller mushrooms, but we decided to use Portabellas last night.

Preheat Oven to 375 degrees.

Combine olive oil and garlic over a warm skillet.

Stir in bread crumbs (we used panko), garlic powder, salt, pepper, and parmesan.  Coat and toast bread crumbs ~7 minutes.

Stir in spinach ~3 minutes until wilted.

Place bread crumb mixture in cleaned out mushrooms and bake for 15 minutes.  Top with more cheese if desired and return to oven for another 2-3 minutes until cheese is bubbly.
